Pumpkin Whoopie Pies

Senior in life & Retired My husband & I built our retirement home, and I designed the floor plan. Our kitchen has two sinks, at opposite ends of the kitchen. While I work I don't like people in my "space". I love pie making and use my grand mothers rolling board. Sink # 2 is near the kitchen table, and is a bar & desert serving area. Our dining room is directly off the kitchen which makes for nice flow plan, when serving a large group. I have a small garden patch, in my landsape off our veranda. Our back deck is filled with herb containers. Early spring I grown a pot of mixed lettuce.
My favorite things to cook
Home style & traditional with a twist of "free hand". Deserts are a speciality, nearly everyday our kitchen has a desert on the counter. My kids, grand kids and great grandies walk in and look for the love! #2-We have acreage & have venison, and butcher our own deer meat every year. I consider the way we process it, and my skills( taught to me by my Gandmother & Mother)are very high is taste & tenderness.
My favorite family cooking traditions
Pumpkin#1. I bake a pumpkin in the oven (split and scooped) face down in shallow pan w/small amount of water, til tender. Press the pulp thru a food mill, freeze in zip locks, and use for holidays. Pumpkin Whoopie pies filled with Philly Cream Cheese is our family favorite.
My cooking triumphs
Born & raised in a farm produce family of 8! 5 brother & 2 sisters, I'm #7( first girl after 5 boys). I worked side by side with my mother cooking and canning all my life. Today I have a dinner with my siblings & their spouses. "Pre Holiday", I call it our Harvest Meal", it's after the growing season and we are not rushed by the pressure of other's our time to share & hold a moment for grace & tribute to the ones we lost.
My cooking tragedies
Simple, Healthy & Presentation. Prepare foods that can be reheated without losing the quality, as a time saver for meals serving 6 or more.

Strawberry Glazed Pie
E-Z! to convert to a low sugar recipe- and I modified the sugar using Truvia & used sugar free Jello, and a low-cal whip topping. I value the nutrition value info that is offered for each recipes.

Slow Cooker Apple Butter
I use 2 types of apples..and just white sugar. Cook time-start on high, get it bubbling, then turn to low, cooking over nite( with sugar), with lid cracked for vapor to escape. Done by moring. Process in hot water bath 10 min.
