Best Ever Meatloaf I

A winner in our family! I forgot to get the tomato juice when shopping, so I just substituted 3/4 C ketchup and 1/4 C water. Seemed to work well! Also used egg substitute, but think the oatmeal didn't bind as well with the meat because of the "real" egg.

Chicken Supreme III

Oh my gosh! What a great fall dish! My family loved it! I too cut down on the margarine used (I do this in most recipes if I can get away with it). I used Stove Top stuffing mix for chicken, and it was great!

Cincinnati Chili II

Interesting recipe using tomato soup instead of tomato sauce or diced tomatoes. I felt like the soup made the chili way too sweet for my family's tastes. To try to add a little more actual tomatoes,I added a can of diced tomatoes. Also, the cinnamon was way too powerful for my family- they didn't even notice the "hot" spice, just the cinnamon! I liked it, but the family did not, so it won't be on our menu again.

Baked Macaroni and Cheese with Tomato

Don't try to make this recipe low fat, or it won't be moist enough. I made the mistake of trying to use "non-fat" cheddar cheese, and it was so dry, the edges were crunchy! If I were to try this again and try to cut the fat, I'd use 1/2 non-fat cheese and 1/2 reg. cheese. Also another suggestion would be to use evaporated non-fat milk or just reg. evaporated milk- helps to make it creamier.
