Spicy Indian (Gujarati) Green Beans

Had to improvise - no black mustard seeds, but I figured that no one was the wiser. Used Garam Masala blend instead, and fantastic, TASTY results! Didn't measure, but whatever amt was great. I also added Coriander, and a little ginger powder. No beans from the garden on this attempt, but the steam in the bag worked great - 1/2 the time in the microwave, and then slow simmer in the pan. mmmmmmmm

Authentic Enchiladas Verdes

I made this for a group of 8 that came over to the house for dinner. Everything about these enchiladas were irresistible! The frying then coating with salsa was a little difficult at first. However, after a few (Delicious) attempts I got the technique down. I even had one guest as for more of the tomatillo salsa. They were looking for heat, so I made certain to chop up the fresh jalapeno that they contributed to the meal and add that to the top of their enchilada. These were a hit! Not even remotely easy to make, but a great way to feed a bunch. I think the next step is to make them when they're here rather than ahead of time.

Asian Orange Chicken

I put together a variation of the sauce on my first try. I used lime juice, juice from 1 orange and its zest, then 3 tbsp of orange (reduced sugar) marmalade. I was crunched for time so it marinaded for 2 1/2 days. I slowly added the cornstarch and water, and still only used about 1/2 of the slurry. When I have a little more time to prep - I'll hand write my grocery list, and get all of these ingredients rather than using the check boxes and getting lost in application codes. That's another post. I digress. Great ingredients, great mix of take out flavors. I'm taking this to work with me so I don't have to give in to that $$$ plate of orange chicken.

Slow Cooker Tomato Sauce

This is now my go-to recipe. It's easier and easier each time. Tomatoes from the farmers market have 3 times now been made into this recipe with different spices each time, but this metod for all of them.

Baked Kale Chips

Such a great way to get your veggies, and stay balance. This morning, I returned from the farmers' market with intentions of making Kale chips from the 2 bunches of fresh kale I got. However, I had a revelation of sorts. I al came back with bacon: natural, uncured and preservative free (for bacon). I cooked 2 strips and used the bacon oil rather than olive oil. My wife, the non-kale eater, is now saying we should have this dish weekly. Thank you for the recipe! It's so easy and can be done so quickly! Now, if there was only a way to do this in summer without re-heating the house...hmmm. :)
