Chicken Enchiladas II

Great quick recipe. I jazzed it up a little with some chopped fresh cilantro. The sauce was a little thick for me so I added some chicken stock to the sauce after it was divided. I also opted for corn tortillas. Will have to double the recipe next time, didn't have any leftovers.

Lemon Custard Cake

Very tasty! Great quick summer dessert! Will definitely use this again. I served each dish with whipped cream and topped with one of the cherries and a thin slice of lemon in a pretty dish.

Zucchini Herb Casserole

This casserole received great raves. Made half with cheese and half without. Both ways tirned out great. I substituted cherry tomatoes halved because they needed to be used, otherwise follwed the recipe as written. Made a great sidedish for tilapia.

Teriyaki Sauce

Great tasting sauce. I thickened it a little with 2 teaspoons cornstarch. Also used reduced sodium soy sauce. It made a perfect glaze for meatballs. This is a versatile quick recipe that I will use often.

Bananas Foster Belgian Waffles

These waffles turned out perfect. Only made the waffles. This was the first time I made Belgian waffles. My british spouse thought they were perfect, too. A very easy recipe that I will use again! Took one point away as they were a little eggy as others mentioned.

Turkey Macaroni Salad

Great recipe! I didn't have green onion, didn't even have a yellow onion, so I used1/4 cup French's onions crushed. I also added 1/4 cup milk to make the dressing creamier. Will be better prepared next time!

Breakfast Sausage

His is a very nice basic recipe. I have used ground turkey for this as well. On my 2nd batch I added a tsp of garlic and onion powder as well. It rounded out the flavor. Thanks for sharing this simple recipe. I now use it frequently.

15-Minute Herbed Chicken

This recipe inspired me with a few tweaks of my own. Like others, only had crm of chicken, so added my own herbs (1/2 tsp of tarragon, 1tsp parsley, 1/4 tsp marjarom,1/2 tsp garlic powder), substituted 1/3 cup white wine for milk. Used EVOO. Turned out great and in about 20 minutes (used long grain rice).

Blueberry Pancakes

Great recipe! My mother loved them! I left out the vegetable oil and used an extra 1/8 cup milk. Also used frozen blueberries. Quick & easy, but they taste extra special. Will definitley add this to my recipe box! Thanks!

Bread Pudding

This recipe was my first attempt at bread pudding. It was wonderful! Just like gramma uses to make (except she made a rum sauce). I used left over cinnamon bread I had frozen just to make this. I folowed the recipe exactly as written. I baked it for 1 hour 15 minites as at 60 minutes the bottom was still very custardy. It came out beautiful! Can't wait to make it for the holidays. Thanks!

Buttermilk Pancakes I

Wonderful and easy. I didn't have buttermilk so added 1tbsp+1tsp white vinegar to milk. Made 6 good sized fluffy pancakes. This will be my go to recipe for buttermilk pancakes. Thanks!

Banana Muffins II

I followed the recipe exactly. It was ok, but lacked flavor; even with all the sugar & bananas. The muffins baked up nicely, though, fairly moist. With a little tweaking this is a good basic recipe. I recommend baking muffins at 340 degrees for about 12-15 min. They came out perfect with this change. I will try some of the other review suggestions for flavor enhancement.

Campbell's Kitchen Sweet and Sour Chicken

I followed this recipe exactly. It was very easy and very good. Was hoping for leftovers for lunch, but no such luck. Next time Imay add some onion as suggested by another reviewer, this is a good basic recipe that you can change by adding other veggies for variety.
