Good Old Fashioned Pancakes

These are great. For school mornings you could: 1.) make a ton, wrap individually, freeze, and microwave or 2.) combine enough dry ingredients to make 20+ pancakes and store in the freezer, measure what you need in the morning, mix with the right amount of wet ingredients and quickly cook them on a griddle. Much more nutritious than store-bought!

Slow-Cooker Chicken Tortilla Soup

Super! I had all of the ingredients on hand (which is rare) and dumped them in the slow cooker. Six hours later my family had arrived and devoured the whole batch. Serve with shredded cheese, sour cream, etc. This is a keeper!

Broiled Tilapia Parmesan

Use the most-expensive, fresh parmesan that your budget allows and you will not be disappointed when the flavors of this dish collide! This is a regular in our household and I pair it with fresh greens and wild rice. YUM!

Mini Cheesecakes I

I make this regularly and it always turns out great! The one thing I do to cut down on time is to NOT crush the vanilla wafers. They fit in the bottom of the muffin cup perfectly uncrushed.

Country Fried Steak and Milk Gravy

Great taste and my family really enjoyed. A restaurant near us breads and fries the steak like this and then tops it with monterey jack cheese, scallions, chopped fresh tomatoes and chilies. It's dynamite!

Lemon Blueberry Bread

Made as directed and YUM!!!! I made once without the glaze and it was ordinary and another time with the glaze and it's a must! The sugar/lemon mixture gets a little crunchy and the flavor is awesome! Pair a slice with a hot cup of tea and you will have yourself a little piece of heaven. :)

Apple Butter Pork Loin

Yummy! I dumped all of the ingredients into the crock pot and four/five hours later, I had delicious pork. I shredded it with a fork and served over garlic mashers. YUM!

Basic Yankee Bread Stuffing

I LOVE this! It's a hearty dish that will make your tummy very happy! I don't use white bread; I buy a loaf of day-old french bread and tear it up into chunks. Works like a charm!

Spicy Bean Salsa

GREAT! I didn't use the Italian dressing, though. I found an organic sweet pepper marinade/dressing that I used instead. It added a little bit of sweetness, which I though worked well with the spicy peppers.

Bran Flax Muffins

Five stars for flavor, moist texture, and healthy ingredients! I did have trouble finding ground flax seed; I ended up buying it online through The Bakers Catalogue. In order to "trick" my kids and coworkers into eating them, I made the batter (minus raisins and nuts), halved it, added chocolate chips to one half, and added the nuts and yellow raisins to the other half of batter. I managed to get 12 mini-muffins and 16 regular-sized muffins out of the batter. This is a keeper!

German Chocolate Cake Frosting II

Super flavor! I made a box cake mix and topped it with this yummy creation for a fire-company picnic. The fireman gobbled it up quickly and it was the first dessert to disappear! One hint - I did use butter and halved the amount. I also let it cook on the stove a while longer to achieve the gooey effect.

Italian Meatball Sandwich Casserole

The mayo and cream cheese gave this a not-so-Italian taste. I was the only member of my family that ate it, as my husband and children are picky. If I make it again, I will cut the recipe in half (it made enough for an army) and go easy on the mayo and cream cheese.

Peanut Butter Pie I

Very good and super easy! I didn't include the butter in the filling and to be honest, it didn't make much difference. I added an additional 1/4 cup of whipping cream to increase the fluffiness of the filling. I will put in the freezer next time, as I thought it was too soft.

Saltine Toffee Cookies

This is most interesting recipe. So simple and so cheap! The kids helped assemble and were in agony until the cookies/candy was ready to eat! The only change for the next batch....use milk chocolate instead of semi-sweet.

Spinach Quiche

Awesome flavor! A 1/2 cup of butter is alot; you could easily get away with using olive oil to reduce the fat content. I used two regular pie crusts, creating two quiches. We ate one and froze the other for another day!
