About this Cook
I am a busy mom, real estate agent, and college student. Recipes that include everyday ingredients and easy instructions help reduce the pressure that's on me at the end of the day. My youngest child has a heart condition, so I make it a priority to substitute not-so-healthy ingredients with natural, wholesome choices instead. The easiest substitution is in baked goods....pureed pumpkin is delicious in brownies and applesauce keeps cakes super moist.
My favorite things to cook
I make it a point to make something different for dinner on most nights (time and energy permitting). I also enjoy baking and using the crock-pot.
My favorite family cooking traditions
I have been cooking since I was five-years old. I have been teaching my children to cook for the past year. Independence is very important and cooking for yourself is the first step!

Good Old Fashioned Pancakes
These are great. For school mornings you could: 1.) make a ton, wrap individually, freeze, and microwave or 2.) combine enough dry ingredients to make 20+ pancakes and store in the freezer, measure what you need in the morning, mix with the right amount of wet ingredients and quickly cook them on a griddle. Much more nutritious than store-bought!

Slow-Cooker Chicken Tortilla Soup
Super! I had all of the ingredients on hand (which is rare) and dumped them in the slow cooker. Six hours later my family had arrived and devoured the whole batch. Serve with shredded cheese, sour cream, etc. This is a keeper!

Broiled Tilapia Parmesan
Use the most-expensive, fresh parmesan that your budget allows and you will not be disappointed when the flavors of this dish collide! This is a regular in our household and I pair it with fresh greens and wild rice. YUM!
