Hearty Multigrain Bread

The first time I made this bread it turned out like a hockey puck...but the inside tatsed great. So I gave it a 2nd try. I had to adjust the flour, water and yeast levels to get it right and I decided to have my bread machind do the dough and I baked it in the oven myself. After the modificatsion it turned out GREAT!

Pumpkin Black Bean Soup

I really liked the soup. It’s a very simple and easy soup. Nothing gourmet about it, but it is very comforting on a fall night. I made a few minor modifications based of other reviews. I added some smoked paprika, cumin and cayenne pepper with the onion and butter to sauté. I also used a 29 oz can of pumpkin since I really wanted that to come through more and I used a can of diced tomatoes with chilies. All in all it’s a great recipe on the budget while satisfying.

Caramel Apple Eclair Cake

SO GOOD! Made this for a friends birthday because one of her favorites is Caramel Apples. Everyone LOVED it and all the guys were asking me to make it for their birthdays! Definatly a keeper!

Sweet Corn Cake

Wow this is the first time something that had such a great rating was a flop for me. I LOVE sweet corn cake at the restaurant and was craving it at home. I had everything on hand so I decided to make it. I am an experienced cook and followed the recipe but it was kinda gross. I baked it for over and hour and it had a really grainy texture and the taste was funky…I think it might have been the masa harina. I am going to try again.

Cocktail Meatballs I

I loved these. I cheated and used Frozen Foster Farms Turkey Meatballs (about 1/2 bag) from Costco. The sauce was really good. I followed the suggestions of from reviewers and added a little worsteshire sauce, Dijon mustard and whole grain mustard to the sauce.

Authentic, No Shortcuts, Louisiana Red Beans and Rice

I’m giving 4 stars because I made quite a few changes to the recipe. I didn’t have all of the ingredients so I made some substitutions. First off did a quick soak on ½ a package of small red beans (followed the directions on the bag). In a dutch oven I browned 1 lb Portuguese smoked sausage (doubled the sausage since I didn’t have the ham hock). I then set the sausage aside and sautéed 1 diced yellow onion, 1 diced red bell pepper,1 diced yellow bell pepper, and 6 cloves of garlic. Then to the veggies I added, black pepper, smoked paprika, cayenne pepper, thyme, and Creole seasoning. I also added chicken stock granules and beef stock granules. Continued to cook the veggies with spices till tender then added 5 cups of water, beans, cooked sausage and 2 bay leaves, let it simmer and tilted the lid and let it simmer for about 3 hours till the liquid was absorbed and beans were soft. Mixed with cooked long grain rice. I cut the beans, rice and water in half since its just me and I don’t want to eat red beans and rice for a week but left the rest of the ingredients the same measurements if not more and added more seasonings since a lot of the reviews suggested it. I had also planned to make it the crock pot but ran out of time and went with my trusty cast iron Dutch oven, worked Great! Will def make again.

Easy Batter Fruit Cobbler

Other reviewers are right...beware once you start you just don't want to stop. I went back 2 times for more! I used a whole bag frozen mixed berries with cherries. When I made the batter I added ground nutmeg and cinnamon. I used brown sugar to sprinkle on the on the top with more cinnamon and nutmeg before baking. I also had to bake for quite a bit longer than 50 minutes, but it was worth the wait. Quick, easy and made with items I always have at home.

Romantic Chicken with Artichokes and Mushrooms

My roommate first made this recipe and it was so good. The sauce is very runny but I just added to a rue and made more of a gravy out it. It is really good served with mashed potatoes.

Gloria's Sausage Gravy with Biscuits

Feta Chicken

This was great Chicken. I am doing low carbs so instead of using the bread crumbs I covered the checken with almond meal. I used plain feta because that is what I had and then drizzled it with some balsamic vinegar. After the chicken had baked for about 10 minutes I added some sauted mushrooms to the center of the chicken. I served the chicken ontop of sauted fresh spinach with some garlic salt. It was so good and easy. Thanks for the great recipe.

Addictive Sweet Potato Burritos

These were great! I took the advice of many reviewers and made them with black beans. I also added one small can of diced green chilies. It added a little bit of flavor but was not to over opowering. I also used whole wheat tortillas and they were great.Like one reviewer said get extra tortillas because the filling will fill alot more than just 12 tortillas, I actually got 24. My sister who is vegan loved them (I mader her a few without the cheese). Thanks for the great recipe. I will definatly make again and they are a great food to make and put in the freezer and to talk in lunches.

Vietnamese Style Vegetarian Curry Soup

This was great! I made it for my roomates and a few friends that came over. Everyone loved it and it was very filling. I could not find some of the ingredents so I improvised. I used green onions instead of Shallots (one whole bunch), I alos used lime zest and juice instead of the kaffir lime leaves, and I used lemon juice instead of the lemon grass. I also used soy sauce instead of the fish sauce. The soy sause really gave it a distinct flavor. I didn't fry my tofu and it still tasted great. I used one reviewers suggestion and used sweet potato intead of regular patatos and it tasted great. The bean sprouts and cilantro added on top was wonderful it added a new texture and taste. Great recipe I will definatly keep this in the recipe box and make again.
