Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

8/11- Added 1/2 c. ground flax,1 t. cinnamon, slightly less sugar, chopped the strawberries and added to flour mix. Made 20 muffins. Baked 17 min dark, 20 min regular. They stuck to liners a bit, so next time I'll spray. Delicious, healthy muffins. : )

Bacon for the Family or a Crowd

This was a great way to cook bacon! 400 for about 10 minutes. Here are my tips for fast cooking: Line pan with foil, turn half way, use lower racks, do not use cooling rack in pan. I made two pans of regular sliced and put one on each oven level. The lower cooked MUCH faster, as did the bacon that was just on the foil. Thanks for a great method!

Butternut Squash Soup

roasted 6 cups cubed squash with garlic, salt & pepper at 350 for about 20-30 min. Sauteed onion and small apple in butter. Added 3 cups chicken stock and 1 cupp apple juice. simmered for do min. Later reheated and used immersion blender.

Mom's Best Pork Chops

9/10- Used Panko and Pampered Chef Steak Seasoning. Crumbs are crispy and delicious! Had very thick pork chops and cut them in half. Next time, track the cooking time and temp. (this time I varied it.)

Classic Waffles

this was great. made in blender (wet ingredients first) Used 3t baking powder, 1t salt, 1 t cinnamon, 3T sugar. made more than enough for 4 kids and a mom. : )

Banana Crumb Muffins

Tried today at high altitude. Baked beautifully, smell and taste great! Like a delicious, healthy muffin! :) notes: decrease heat, slightly. Used 1c flour, 3/4 c almond meal, scant 1/2 c sugar, 1/2 tsp cinn., 1/4 c brown sugar, and used 1/3 c olive oil instead of butter. Re: the crumb topping, I used the 2T flour, 1T butter, and cinnamon, and did not end up with crumbs. (yes, I'm familiar with the process) Instead had more of a dough. Anyone else have this trouble? Maybe an error in the quantities?

Artichoke and Sun-Dried Tomato Chicken

Browned chicken in oil and garlic. Set aside. 1 can fire roasted tomatoes, 1 can artichoke hearts, cut smaller, 1 lg can olives-sliced, about 1/8+ c. oregano. L, J, and I liked it alot. next time tenderized chicken and have in smaller pieces so it doesnt get touch on outside and not done inside. Sprinkled with feta was good. Next time double the canned goods for plenty of sauce.

Creamy Rice Pudding

I think this turned out great! I added sugar when rice was tender, and it worked well. Also, I would use less than 1/3 cup last time. At the end, with the egg, I added some vanilla, almond, and a bit of cinnamon extracts. I would not use purple raisins again- too sweet- but may try golden. Thanks! This was delicious. (2 servings for me.)

Whole Wheat and Honey Pizza Dough

4.5 stars, and only because I need to practice! This was easy, healthy, and tasted great. Had my bread maker do the mixing and rising. Baked on a stone and brushed crust with an egg wash. The bottom was a little tough, but still good. THANKS

Yum, Yum, Yum! Need to figure out how to get the glaze less "grainy." Next time try with chocolate pudding and mint chocolate Baileys. Great Cake!

Broccoli Chicken Braid

This was yummy, and everyone liked it. I did forget the cheese, and know it will be even better next time. Didn't measure chicken, but was 2-3 cups. sauteed 2c. broccoli with red pepper, onion and garlic. Braid took much longer to not be doughy in the middle/top. next time I'll try not to overlap so much dough in one place. THANKS!

Balsamic Roasted Pork Loin

Doubled liquid ingredients for 3.5 lb roast. Used 1 1/2 T seasoning. Marinated overnight and stuck in crockpot on low for 8 hours. It was great!

Sweet Summer Fruit Bruschetta

Used as a guide and adapted to what fruit I had on hand. This was EXCELLENT and I don't think you could go wrong with slight variations. Half of it got eaten by family and friends as I was putting the rest on the bread rounds. Can't wait until summer to make this again. THANKS!

Marinated Grilled Shrimp

Overall the family rated this 4 stars, meaning, "it's really good- make it occasionally." That works for me! I used 1 lb with sauce doubled. Shrimp were partially thawed, so cooked unevenly- hence most were overdone as they continued heating while waiting for others to finish. When in the bag marinating, it does NOT look like enough, but when cooked in covered skillet, it made enough to put over rice, Did not like it left over as it was too "fishy." YUM!

Seattle Dutch Babies

Kids and I love this. It's very easy if you plan ahead to heat up oven and let it bake. I use 4 eggs and 1 cup of the flour and milk in a 9x9 pan or a 10" skillet and there are 4 good-sized wedges. However, if we want more than that, I double ingredients and use a 9x13 pan. Great with many toppings- spread on some jam for an easy, on-the-go breakfast! 11/10 powdered sugar and a sqeeze of lime is divine. whole wheat flour doesnt puff.
