Gluten-Free Chicken Nuggets

The first time we made this we had some gluten-free bread crumbs we wanted to use; everyone loved it. I also used a basic gluten-free flour blend instead of plain rice flour. This time we followed the recipe using Corn Chex and they liked it even more (if that is somehow possible). I left the Chex in the bag and crushed it with a rolling pin instead of the processor. Such a nice tasty nugget and the gluten version is not missed!

Gluten Free Banana Bread

Hit with the whole family. I just sprinkled the top with a bit of cinnamon and sugar to give it a more browned look since that is what they are used to seeing.

Delicious Gluten-Free Pancakes

These were a surprize. Really good. Not just good for gluten-free. I did add a bit of lemon, cinnamon, and honey and used almond milk which I'd turned into a "buttermilk" by adding a bit of vinegar and lemon for 5 min. The kids and husband asked for more.

Great Easy Waffles

The first time I made this I didn't have fresh lemon so I just used a bit of lemon juice. The waffles were really flavorful and fluffy. I have a belgian waffle maker so they weren't very crispy. The second time I used the lemon zest and everyone liked them but thought the lemon was just a bit overpowering. This is my favorite recipe and i'll just be reduce the lemon zest by 1/2.

Flan II

This flan is smooth. I'm a new cook so I wasn't clear on carmelizing the sugar ( I added 2 tablespoons water and a drop of lemon) The recipe is so easy and still one of the best flans I've ever eaten. Thinking I'd messed it up anyway after I added the sugar to the dishes I added a tablespoon of amaretto to two of them. All four turned out amazing. I will be keeping this recipe for sure. Thank you.

Buttermilk Pancakes II

Day one great, day 2 I added vanilla and lemon, amazing, day three I only had milk so I used that in place of buttermilk and it made equally good but thinner crepe like pancakes. I can finally stop looking for the perfect pancake recipe. These are fluffy with buttermilk, and have a suble crisp and are flavorful and not too cakey or sugary.

Chewy Peanut Butter Chocolate Chip Cookies

The best peanutbutter choc chip cookies I've ever had. Super easy to make. They stayed soft but didn't fall apart. My husband begged me to make another batch the very next day and the kids gobbled them up. A couple of the neighbors complained there wasn't enough. I think I made about 36 medium sized cookies. I eyeballed the chips adding only just over 1 cup.

Spicy Vegan Potato Curry

I liked the basic recipe. It was a bit hot for most of the family members. I also felt like it lacked a bit of something so after the first tasting I added yogurt and that definitely added the extra I was looking for.
