Baked Potato Soup

A favorite in our house!! I just cook the peeled an cut potatoes in the broth though, no need to bake them ahead of time.

Eggplant Sandwiches

These were great! My meat loving husband really enjoyed them and told me to make them again and even my 3 year old liked them. I did peel, thinly slice, and grill the egg plant. I also grilled the bread just a bit too. The only thing I will do differently next time is a tad less garlic in the mayo. I doubled the recipe and I guess my cloves were really big b/c it had quite a garilc bite to it. My kids liked them as I said earlier, but did ask to not make it so spicy next time.

Basic Crepes

These were delicious! We filled ours with yogurt and topped them with fruit and whip cream. I mixed it all in a blender. These are a new family favorite!

Homemade Black Bean Veggie Burgers

So good and so easy. Never tried grilling them, but baking them is so quick and simple. My mix seemed really wet even after I added more bread crumbs, but I just spooned it onto the cookie sheet and patted it into a burger shape. They baked just perfectly. Feel free to use bread crumbs or a combo of bread crumbs and oats. I will say that it is a thick burger and needs lots of good toppings like tomato, lettuce, grilled onion etc. Whole family liked them!

Soba with Toasted Sesame Seed Sauce

Pretty good, but too much vinegar. I would use less next time. For veggies I used red, yellow, and green peppers along with some carrot and the green onion. I sauteed them for just a few minutes to soften them, but not too long as to keep a crunch. I may try again, but with less vinegar.

Good flavor, but pretty dry. I would add more eggs next time and maybe more milk? It was easier than most breakfast casseroles, but a bit dry for me.

Chocolate Cherry Cake III

Such a good recipe. I have been making this for a long time and it always gets rave reviews. My husband is not a chocolate lover and he wanted this cake for his birthday. The almond extract is a must and so is the frosting. Don't try to substitute store bought, it won't be the same.

Ground Turkey Casserole

My family liked it. It was a pretty good basic meal. I did use one jar of prego marinara sauce and a small can of tomato sauce because it looked like it would be too dry. I am glad I did, it was just right. I also cooked the turkey with a little onion and garlic powder for more flavor. My husband loved it.

Chocolate Pecan Pie IV

Great! I made it for Thanksgiving and it got many compliments. Serve with real whip cream and it is wonderful. The only thing I will say is to either make in a torte pan or be sure to keep the sides of of your crust low because it doesn't rise a lot.

Slow Cooker Chicken and Dumplings

Not terrible, but not really good. It was very processed flavored, but the chicken was nice and tender. Way to much biscuit and not enough chicken. We ate it, but won't make it again.

Banana Crumb Muffins

Okay I am really only rating the crumb part of this as I used my own banana bread recipe. I made a loaf of mine and then topped it with this crumb topping to make it extra yummy for a girls night. It was really good, but I will only keep it for special occasions as it takes away a lot of the health of banana bread. I did however add a TB. more butter because it seemed really dry and not crumbly. It turned out wonderful and my family even loved the leftovers!

Chicken, Rice and Vegetable Soup

I thought it was pretty good, but my husband said it was pretty bland. I did use brown rice instead, but I can't way this was amazing. It was nice on a cold fall day, but I think I will keep looking for a little more interesting recipe.

Hot Artichoke and Spinach Dip II

Pumpkin Cake III

So good. I made this for a party and it got many compliments. One woman ate three slices. I did substitute 1/3 cup of oil with applesauce. I also added 1/4 tsp. of cloves and 1/4 tsp. of nutmeg which I was happy I did because it may have been a bit bland otherwise. Because I love pumpkin and didn't think it had a huge pumpkin flavor I think I may substitute that 1/3 cup of oil with more pumpkin next time instead of applesauce. I made mine in a bundt pan and it did take almost an hour. I topped with cream cheese frosting and it was great!

Cabbage Jambalaya

This was such a quick and easy meal. I have never cooked with cabbage before and I was a bit nervous about the result, but my husband and I loved it. We like smoked sausage, but I was sick of my same old recipes so I tried this and it was great. I omited the celery because I didn't have any and I felt it could use a bit of salt, but otherwise it is very yummy!!
