Springtime Citrus Cooler

Lovely, light, and refreshing. The rose water adds a lot to the drink, so don't leave it out if you're able to get your hands on it! I used half of the sugar because my orange was extremely sweet.

Indian Eggplant - Bhurtha

I was dubious about charring the eggplant in the oven, but it turned out perfectly, and was very easy. I acutally set the broiler to 500 degrees rather than all the way up, and by the time it charred, all of the bitter juices had leached out of the eggplant and it was extremely soft (no need for pureeing to get it smooth). The flavor of this dish was very good, though I left out the fresh cilantro because I don't like it. I will be making this again!

Stir Fried Kale

Very easy! I didn't have breadcrumbs, so I added some crushed croutons that I found in the pantry at the end of the cooking. When I asked my boyfriend how he liked the kale, he responded, "That was kale? But that was good!"

Filet Mignon with Rich Balsamic Glaze

This came out very well. I didn't cover it during the 8 minutes of cooking in the sauce and the glaze reduced nicely after about another 10 minutes on medium-low heat after I removed the meat. I also added garlic as others suggested. A great, quick meal with very little fuss!

Creme Brulee

A fantastic creme brulee! I followed the advice of chefpeon, and it came out perfectly except for the caramalized topping, but that's due to my poorly heating oven and no butane torch and has nothing to do with the recipe. I had no idea that getting restaurant quality creme brulee would be so easy! I will definitly be making this often.

Cheesiest Tomato Soup

Fantastic! I've officially outlawed any canned tomato soup after eating this. As recommended by several others, I added a bit of sugar to it. I also brought all of the other ingredients to a boil before adding the cheese, and it melted instantly and completely incorporated itself into the soup. I'd suggest doing that rather than adding it in along with everything else. It was very smooth, and the flavors blended well.
