Creamy Chicken on Linguine

Although I read several of the other reviewer's suggestions about the sauce I decided to try the recipe as written before making any modifications. The sauce was very thin and I hoped that it would thicken if I let it simmer a while. Unfortunately that didn't happen. It was tasty, but when I make this again I'll leave out the milk and increase cream as needed. I think this would also be good with shrimp and crab instead of the chicken.

Baked Spaghetti

This is an easy recipe and always a hit whenever I make it. I have made a couple of modifications by omitting the ground beef and decreasing the amount of mozzarella cheese. I also add some chopped red or green pepper and increase the sauce . It has the tendency to be dry at times. You won't even miss the meat.

Jay's Signature Pizza Crust

This crust turns out perfect every time! I increase the serving size to 20 and that gives me enough dough for two pizzas (two regular pizza stones) I divide the dough in two and roll out while the stones are preheating. I assemble the pizzas on the preheated stones. All ovens are different so just check bottoms until they are done to your liking.

Slow-Cooker Pepper Steak

This reminded me of the pepper steak my mom used to make when I was growing up. It was very easy to make and tasted good too! I modified the recipe a little and purchased the pre-packaged pepper steak instead of the beef sirloin and just sliced it into thinner strips as they were pretty large pieces. I did not have the stewed tomatoes so I used diced tomatoes instead. I also followed another suggestion and cut my red and green peppers into larges pieces instead of chopping them. I used a mixture of red and green to add more color. If you like a firmer pepper I would add the peppers a little later, although I had no complaints!

Quick and Easy Green Chile Chicken Enchilada Casserole

My family loves this recipe. I cook my chicken my in the microwave to save time. I have even charred my tortillas on my small gas grill. That way I can do a couple at the time. I add some green onions to the chicken mixture and have used a variety of cheese. Perfect everytime!

Slow Cooker Chicken and Dumplings

This was easy to make and I was pleasantly surprised with how good it turned out. The only modification I made was that I added chopped celery and carrots. It's always a hit with my family.

Slow-Cooked White Chili

This is a nice change from the regular tomato based chili. The first time I made this I was a little concerned about the five cans of beans, so I cut it way back and only added only one can of beans, corn and green chilies. I kept the chicken broth the same and about one pound of breasts. It turned out fine. Adding a little dollup of sourcream and cheese to the individual bowls really made the dish. Family even commented that it was good.

Slow Cooker Mashed Potatoes

I have been using an almost identical recipe that cooks in the oven instead of the slow cooker. I'm never going back! The slow cooker kept the potatoes creamy and hot. It also freed up the oven for other things. I made the potatoes a day in advance and just stored them in my slow cooker liner in the frig ( no extra container to clean and no time adjustment). They were perfect. I did use low fat cream cheese and sour cream. Following other's advice I left out the butter and it wasn't missed. My company and family loved them!

Broccoli with Garlic Butter and Cashews

This was great! The first time I followed the recipe exactly. On the other times that I have made it I cut back on the butter, upped the garlic and left out the nuts. It was equally good. Nice change from just a butter or a cheese sauce.

Best Spanish Rice

This recipe is very easy to make and is a family favorite. I did need to increase my liquid the first time I made it, but it turned out great. What's nice about his recipe is that you can really personalize it to your taste by using your favorite salsa. I've used bouillon instead of broth, added cilantro and garlic and it always tastes great.

Green Chile Frittata

Ali's Amazing Bruschetta

I love this recipe and it's always a hit. Although it's great as written, you can tweak it to your liking. I've added garlic, dried herbs, more onion, etc. When short on time I've used the toasted garlic bread slices from the bakery section and just put mixture on top minus the oven. Try to use a better quality olive oil and I usually make the mixture a couple hours in advance and let it sit room temperature a couple hours before using.

Easy Shake and Bake Chicken

I made it exactly as written and my son and husband loved it. My son asked when I was going to make it again. I did have to blot it with a paper towel though before I served it. I think the best part was when I had a flashback to my parent's kitchen and helping my mom shake the chicken in the bag. This is a keeper.
