Incredibly good! I has instant rice, so I made it ahead of time. Sauteed the onion and garlic with some red bell pepper, then added it to the rice with the beans, spices, chopped roma tomatoes and a little bit of corn. When it was done, I sprinkled some fresh cilantro on top and added a small dollop of light sour cream. It was a meal in itself! My husband was very impressed that this healthy meal was so tasty! He has encouraged me to make rice this way every time.
