Chef John's Minestrone Soup

Soooooo easy... Sooooooooooo good. Added carrots. Used pinto beans in place of the cranberry beans and cooked pasta separately since part of our home is gluten free. Delish!!!!!

Broccoli Rice Casserole

Made with leftover steamed broccoli and only used cream of mushroom (all i had on hand). Was fantastic! Made half the recipe and it was a ton of food. Tho i wont mind the leftovers! :-)

Chicken Breasts with Balsamic Vinegar and Garlic

I was scared the balsamic would be overpowering after reading the other reviews. To be honest, I found the chicken to be rather bland. The mushrooms were fantastic. I think I would marinate the chicken next time, and add some white wine to the sauce as another viewer suggested.
