Chicken Breasts with Balsamic Vinegar and Garlic

I was scared the balsamic would be overpowering after reading the other reviews. To be honest, I found the chicken to be rather bland. The mushrooms were fantastic. I think I would marinate the chicken next time, and add some white wine to the sauce as another viewer suggested.

Chicken Cordon Bleu II

AMAZING! I cut a pocket in regular boneless chicken breasts and stuffed the ham and cheese inside. I also didn't have any cream, so I used 1% milk, a little more corn starch and some chicken broth. The chicken melted in your mouth! Can't wait to make it again!

Made it just as suggested. It was a hearty filling meal, but could have used a little more flavor. Maybe next time I will cook the potatoes in chicken or vegetable broth instead. Will make again.

Black Beans and Rice

Incredibly good! I has instant rice, so I made it ahead of time. Sauteed the onion and garlic with some red bell pepper, then added it to the rice with the beans, spices, chopped roma tomatoes and a little bit of corn. When it was done, I sprinkled some fresh cilantro on top and added a small dollop of light sour cream. It was a meal in itself! My husband was very impressed that this healthy meal was so tasty! He has encouraged me to make rice this way every time.

Slow Cooker Ham and Bean Stew

Quick and easy. I followed the advice of others and added carrots, celery and onion. Also chopped up a jalepeno pepper. Seasoned with cumin and a little chili powder. It seemed a little dry, so I added a cup of beef bullion thickened with a tablespoon of flour. Delish! Will definitely make again!
