Pumpkin Gingerbread

Very moist. Like others, I subbed applesauce for all of the oil. Double spices, but kept allspice as written - too overpowering doubled. Made in a bundt pan. Needed to bake a bit longer at 325 degrees. Frosted with cream cheese frosting. Made day before and wrapped tightly in aluminum foil prior to frosting day of. Delicious! Will make again and again.

Spinach and Carrot Quiche

Delicious! Can do so much with it to suit your own tastes and spices and whatever veggies you have on hand. I also used eggbeaters instead of eggs. Thanks for the EASY recipe.

Peanut Butter Fudge IV

I went through dozens of fudge recipes looking for one that seemed the easiest, and tried this one. All I can say is WOW! This is really delicious. I followed the recipe exactly and it came out great....even if, in truth, I didn't wait for it to cool totally before trying it. I'll be making this one again.

No Bake Peanut Butter Pie

This is another reason not to have to go out for dessert. I only used half the whipped cream called for and it was perfect. I might even make it with more peanut butter next time. Used an oreo cookie crust as others did. Light cool whip, too. It's a do-again!

Amazing Pork Tenderloin in the Slow Cooker

Waffles I

Excellent. Made in a blender, doubled the vanilla. Used 1 T. brown and 1 T. white sugar. Next time I might try a little almond extract or banana flavoring to give it more flavor. Made exactly 6 belgian waffles. Will definitely make again, and stop looking for other waffle recipes.

Banana Pie

I cannot for the life of me figure out how you can put 7 oz. of pudding mix into 3 oz. of "fluffy" cream cheese and make it creamy. It was a mess. Ended up adding another 3 oz. cream cheese, a tub of cool whip, a bunch of banana slices, and enough milk to make it somewhat creamy. Thank goodness I had my kitchen aid to beat it all. My pie ended up great, but it was nowhere near what this recipe says to do.
