Beer Cheese Soup III

Reviewed: Jul. 7, 2004
I made this into a vegetarian soup by substituting vegetable boullion and cream of celery soup. It was delicious, but very salty. Next time I'd add less cheese and definitely won't add any salt.

Becky's Oatmeal Carmelitas

Reviewed: Feb. 23, 2004
Absolutely delicious! These have become a family favorite and I'm always requested to make them for the holidays. I only use half the amount of chocolate chips, otherwise it's just too much chocolate. I've also used milk chocolate chips instead of semisweet and it was just as good. I melted my carmels in the microwave with the milk instead of on the stove. It's much easier that way.

Instant Vegetable Patties

Reviewed: Feb. 23, 2004
Delicious. Almost like the samosas we get at the Indian restaurant. I used one jalepeno pepper instead of the 2 chile peppers and it was still plenty hot.

Spinach Muenster Quiche

Reviewed: Feb. 23, 2004
Great crustless quiche. We try to eat low-carb, and this recipe without the crust was perfect.

Biscotti Toscani

Reviewed: Feb. 23, 2004
This is a very good biscotti recipe. I left out the orange peel and increased the almond extract to 1 tsp. I only used half the amount of chocolate topping and there was still a little left over.

Soba with Toasted Sesame Seed Sauce

Reviewed: Feb. 23, 2004
I followed the recipe exactly except I left out the sugar. The combination makes for a strange taste.

This is a very good vegetarian gumbo. I left out the green peppers and instead used one seeded jalapeno.

Soft Sugar Cookies V

Reviewed: Nov. 8, 2003
I thought that these were great soft sugar cookies. Even the next day they were still soft. I left out the nutmeg and used cream of tartar instead. I frosted them with buttercream frosting and they were excellent.

Tofu Parmigiana

Reviewed: Nov. 8, 2003
We thought that this was a great recipe. I tried breading the tofu by just dipping it into the breadcrumb mixture and frying, but the breading didn't stick very well. Instead I dipped the tofu in flour, then beaten egg, and then the breadcrumbs. I ended up using about double the breadcrumb mixture. Next time I will use extra-firm tofu instead of firm.
