Grecian Pork Tenderloin

Very good. I started it on the stove for 10 minutes, browning on all sides. Then put it in the oven with the remaining marinade at 400 degrees for 12 minutes, took it out and covered with foil and let it sit 10 more minutes. Sliced and spooned a bit of the marinade on. We had the Beet Salad by Robbie Haferkamp on this site and Orzo with Feta and Cherry Tomatoes from Epicurious.com. Yummy Greek dinner!

Cathy's Banana Bread

Excellent! Made the following changes: 4 bananas, 1 c light sour cream, 1 c brown sugar (no white sugar). Used cooking spray as opposed to greasing and flouring the pan and a bundt pan. Baked at 350 for 40 minutes, cooled 10 minutes and it popped right out. Thanks for the recipe!

Eggplant Parmesan II

Thank you Dolores! Finally a healthy eggplant parmesan recipe that tastes great! Per another reviewer, I baked the eggplant an additional 5 minutes on each side. Served with a side of whole grain thin spaghetti. Yum.

Pork Tenderloin with Dijon Marsala Sauce

Used fat free half and half. Cooking instructions are perfect. I put the thermometer in the meat when I took it from the oven and it was 160. Let it sit about 10 minutes under foil. Perfect!

Banana Crumb Muffins

Wow! I made mini-muffins. This recipe makes 34. Decreased the white sugar to 1/2 c, and increased the cinammon to 1/4 tsp, otherwise no changes. Baked 11-12 minutes at 375. Perfect!

Whole Wheat Rigatoni and Cauliflower, Wilted Arugula, Feta & Olives

Used about 3/4 of the 1lb box of pasta, yellow and orange bell pepper, the whole 14oz can of crushed tomatoes, a bit more Italian seasoning, and spinach. This is really good. Will definitely make this one again. Thanks!

Excellent. Followed others advice and added capers, more cilantro, and Goya sazon. Also substituted diced tomatoes for the tomato sauce. Shredded beautifully. Served with brown rice. Thanks for the great recipe!

Black Beans and Rice

We really enjoyed this last night. The only change I made was to use a splash of Zing-Zang (Bloody Mary mix)in place of the tomato sauce because I didn't want to open a can to use one tablespoon. Also drained but did not rinse the beans. Definitely a keeper! Thanks.

Berry Crisp

Subbed extra strawberries for the raspberries. Did not have apple juice concentrate so I used a Motts Tots apple juicebox. We really like this because it is not very sweet but we did top it with Cool Whip.

G's Flank Steak Marinade
