Butterscotch Gingerbread Cookies

Following the suggestions of others, I used white chocolate chips, and only half the bag. I pulsed them in the food processor and when they baked, they melted and gave this yummy cookie a rich, buttery flavor. I also used margarine to achieve a chewy rather than crisp cookie. Thanks Toll House!

Throw Together Mexican Casserole

This is good. I sauteed some onions, used black beans instead of kidney, added a 4 oz can of chopped chiles, a can of rotel tomatoes with chiles instead of the taco sauce and tomato sauce and 1 14 oz can of diced tomatoes. Also topped with some crushed tortilla chips and shredded mexican blend cheese. This will feed a bunch!

Cabbage Roll Casserole

I quartered this recipe. Still plenty for two and leftovers. Added the onions and some garlic to the beef toward the end of browning. Used an 8 oz can tomato sauce and 14 oz of diced tomatoes. Also added some ketchup and a little brown sugar. Instead of canned beef broth, substituted about 1/3 cup of water and beef boullion. We loved it!
