Broccoli, Rice, Cheese, and Chicken Casserole

Added some celery and onion sauteed in the microwave, used cream of chicken soup only, some fat-free sour cream, a small can of mushrooms, and a poached chicken breast. Also used grated cheddar in place of the velveeta.

Oatmeal Pancake

We love these pancakes. Try modifying them for variety. This morning I used: 1 cup oatmeal, 1 cup all whites egg whites, 1/2 cup cottage cheese, 2 packs of splenda and 1 dozen regular size strawberries all blended together. Using an electric no-stick skillet works perfectly! These were actually a bit "fluffy" when cooked at about 350 degrees. Yum!

Roasted Chicken with Risotto and Caramelized Onions

This is a great recipe. I followed the advice of other reviewers. Used 5 cups of homemade stock, and put in about a cup of thawed frozen peas and some grated parmigiana reggiano at the end. I also added about 8 ounces of a "gourmet" mushroom mix, sauteed at the same time the onions are added back in. We had this as a side dish with roasted chicken as the entree.

Pasta with Kielbasa and Sauerkraut

I liked this. The flavor was great. Have never mixed red bell pepper with sauerkraut, but it works wonderfully. My husband (German) said he would have preferred fried potatoes over the ziti. If I were to make this again with pasta, I would substitute egg noodles.

Pecan Pie Surprise Bars

The only variation I made in the ingredients was to use a full 6 oz bag of pecan pieces, equal to 1 and 1/3 cup, as suggested by previous bakers. I baked the bottom layer for 17 minutes and it was quite brown around the edges. The next stage, the filling was bubbling quickly, so I decreased the temp to 325 and increased the cooking time a few minutes because it was still jiggly at the 35 minute point. After cooling, I ended up cutting all the edges off because they were so hard and brown.
