Mexican Bean Salad

Made a few changes. Halved the recipe and used 1 can of black beans and 1 can pinto beans only. Everything else just halved. This is an AWESOME recipe. Will use this one for years to come. Thank you so much!

Blueberry Crumb Bars

Delicious! Halved the recipe and baked in an 8 inch square pan. Subbed butter for the shortening and sprayed the baking dish with cooking spray instead of greasing. They popped right out. Can't miss with this one! Thanks.

Subbed extra strawberries for the raspberries. Did not have apple juice concentrate so I used a Motts Tots apple juicebox. We really like this because it is not very sweet but we did top it with Cool Whip.

Cathy's Banana Bread

Excellent! Made the following changes: 4 bananas, 1 c light sour cream, 1 c brown sugar (no white sugar). Used cooking spray as opposed to greasing and flouring the pan and a bundt pan. Baked at 350 for 40 minutes, cooled 10 minutes and it popped right out. Thanks for the recipe!

Eggplant Parmesan II

Thank you Dolores! Finally a healthy eggplant parmesan recipe that tastes great! Per another reviewer, I baked the eggplant an additional 5 minutes on each side. Served with a side of whole grain thin spaghetti. Yum.

Pork Tenderloin with Dijon Marsala Sauce

Used fat free half and half. Cooking instructions are perfect. I put the thermometer in the meat when I took it from the oven and it was 160. Let it sit about 10 minutes under foil. Perfect!
