Artichoke & Spinach Dip Restaurant Style

I made this for a party last weekend and it was pretty darn good! I found it maybe just a little too rich and creamy, possibly because i didn't have quite enough spinach as called for. I'll make it again some time when i have a whole package of spinach on hand. Also I'll try it with a different brand of Alfredo sauce. But definitely will make it again.

Baked Buffalo Chicken Dip

Made this last weekend for a party and I'll definitely be making it again. I didn't have the blue cheese dressing or the blue cheese, so just used the 3-Cheese Ranch dressing I did have on hand and some shredded sharp old cheddar cheese. It was still very good, and I had many recipe requests. Just enough heat to warm you up on a cold November day without being too hot. Served with Pita chips, various crackers, Celery sticks and sugar snap peas. Very Yummy.

BLT Dip

I made this last weekend for a party and got rave reviews and several requests for the recipe. I mixed all but the tomato together the night before and added in the chopped seeded tomatoes, just before serving. I used 2 medium on the vine tomatoes. Use good quality apple smoked bacon, I think that makes it really over the top great. I Served this with sesame flavored Melba toast rounds and Ritz crackers and pita chips. So easy and so Fantastic. Update: made this again and wanted to put the "L" for lettuce into it somehow, so I served it with the small crisp inner leaves from Romaine heads. Just the thing for those avoiding carbs and gluten. It was so good, again.

Maple Nut Banana Bread

Made this again recently and the grand-kids loved them so much that they ate all their supper including vegetables, so they could trade in their empty plates for a slice. Have made this also with chocolate chips and without the nuts, just depending on what I have on hand. Always good.

High Temperature Eye-of-Round Roast

This turned out great. I always read reviews before making a recipe but never bother to write my own. This time I will. I had. 2-1/2 lb inside round roast and wanted to end up with something tender and tasty for a change. This method worked! I did marinade the roast in a mix of 1 can of beer, 1 T steak sauce, 1 T Worcestershire, 1 T soya sauce, 1 T barbecue sauce, 4 bay leaves, 1 T freeze dried garlic and onion and fresh ground pepper. Put all in a ziplock and marinate for 8 to 24 hrs. I roasted at 475 for 18 mins turned down to 200 and left in for 50 mins. Let it rest covered with foil and towel for 20 minutes. Sliced it up and served with roasted potato/carrot/onion/ celery mix and steamed broccoli. With a little bit of gravy and horseradish, Best Tuesday night supper ever! Hubby said "wow this is good" and he is a picky one. So try this method and if you have a cheaper piece of beef, try my marinade! Bon appetite !
