September Allstars Activities

Well, today is September 10th, and I have made my foray (is that even a word? or the right spelling?) into the world of the Allrecipes Allstars. I can't even describe how happy I am to have this opportunity. As mentioned, the September activities include Progresso Recipe Starters, and Al Fresco Chicken Sausage. So far I have made 1 recipe written by Progresso, and created my own recipe which included both the sausage and the recipe starters. Here is the personal recipe I came up with:<

The manicotti was absolutely delicious! (not to pat my own back or anything, lol). I really think the addition of the chicken sausage gave it an extra flavor not usually found in manicotti (the mushrooms added to the flavor as well). The Progresso Recipe Starter in the sauce added volume, but not much more. I could have just as easily have used jarred tomato sauce, or thinned tomato paste. Progresso failed with the grilled cheese as well. Unfortunately, it wasn't much better than regular grilled cheese, was an unnesecary step, and my husband said he actually likes regular grilled cheese better. But the kids liked it, so I can't complain (well, technically I can, but where will that get me?). I will be trying at least 1 more Progresso recipe, and 2-3 more al fresco recipies.

Is the chicken sausage just in the sauce or did you add the sausage to the inside of the manicotti?

Lela - I debated about this. I thought about chopping the sausage and adding it to the cheese mixture that goes in the manicoti shells, but thought it would be better thinly slices on top of the shells. I also thinly sliced about 4-5 oz.(5 regular sized) mushrooms and put them on top of the stuffed shells. The cheese mixture includes ricotta, mozzerella, and parmesan cheeses, and fresh spinach. I did this because I wanted the sausage flavor to stand out, and didn't think it would be as good if I mixed it in with the cheeses. I hope this answers your question.

About Me
About the ONLY thing I don't like about cooking is the HEAT!! I'm not sure why, but I get very easily overheated. I usually sit while cooking, and have a fan blowing directly on me if available. I've been thinking about renaming myself - thehotchef - lol. It's a little better in winter, but I live in Albuquerque, NM - it never gets REALLY cold here, and my body just seems to want to overheat when I get busy in the kitchen! That's one of the reasons I like to divide my kitchen work into 2 or 3 parts at a time. One day I chop the veggies, the next day I roast the veggies, and the 3rd day I put together the lasagna and bake, for example.
My favorite things to cook
Bread, black bottom banana cream pie, fruit salad, beef stroganoff. I like to try something new for Thanksgiving every year.
My favorite family cooking traditions
Mom's tea ring, macoroni/potato salad, bread, BRINING the Thanksgiving turkey.

My husband likes his own cooking better than mine! So much so that he is willing to make dinner for our family everyday - that's just fine with me!
