Peanut Sauce I

This is the best, fool-proof peanut sauce I've ever made! I agree--the heating is not picky. If the sauce is too thin, you can bring it to a simmer, and it will thicken up immediately. (be careful though, it does thicken quickly) I served this over stir-fried veggies and tofu. It was SOOOOO yummy!! This is now my go-to peanut sauce recipe, for everything from stir-fry to noodles to satay sauce!!

Cheddar Bay Biscuits

My husband and I could NOT BELIEVE that we were eating the Red Lobster biscuits in our own home!!! And they're SO easy! I also added garlic powder to the dough for more oomph. Other than that, the recipe as-is was perfect. BRAVO!!!!

Chocolate Cavity Maker Cake

This is the easiest "fancy" dessert I've ever made. You don't need to frost it (although sometimes either drizzling a nice glaze or sprinking with powdered sugar looks nice), and it is totally sinful! I've brought this to numerous parties and served it up to rave reviews.

Glazed Meatloaf I

My husband LOVES this, and he's never been a meatloaf fan! I make it with ground turkey, and I think it tastes just as yummy. I make this at least twice a month.

Hot Buttered Rum Mix

This was a big hit at this year's holiday party! I just had to make sure to put enough of the mixture, and not too much hot water. Dark rum is definitely better than light, as well. Overall, fantastic!!

Moroccan-Style Stuffed Acorn Squash

I loved this recipe! I even passed it on. I used both butternut and acorn squash, and both were equally tasty (though the acorn was easier to stuff). The small changes I made were as follows: I cooked the squash longer, so it was very tender, and I added more cumin and more raisins. The sweetness of the raisins were a perfect compliment to the saltiness of the cous cous. This was a perfect, complete vegetarian entree. Bravo!

Slow Cook Thai Chicken

This recipe was amazing! My husband and I both thought that, especially with the fresh garnishes, it was restaurant quality! I put in a bit of sugar because I used sugarless peanut butter, and also upped the spice. I also waited to add the pepper until I added the peanut sauce. That way, the pepper stayed a bit crunchier. Everything was so flavorful, and great over rice!

Slow Cooker Chicken and Dumplings

I took previous cooks' advice, which was to add veggies. What a hit! The only problem I had was that the chicken got a bit dry (maybe I'll do it on low next time), and the biscuit dough was hard to get cooked. I'm using a conventional old crockpot, and all that dough just didn't fit! I had to sort of stir it around to get it to cook, and it still took a LOOOOONG time. But on taste alone, I'd give it 5 stars!

Chocolate Lovers' Favorite Cake

This cake is AMAZING! This was the first bundt cake I ever attempted, and not only did it turn out perfectly, but it was even more decadent than I imagined. I put a simple chocolate glaze over the top (it didn't even need that!), and it looked and TASTED like something straight out of a four-star restaurant. I HIGHLY RECOMMEND this for the holidays or for anytime! Just be warned--it is highly addictive!

Chicken Tortilla Soup I

I loved this recipe! I used some of the recommended subs (cumin for oregano) and additions (cream of chicken soup, double broth, no water)...and the result was a HUGE batch of delicious soup. I also added more chili powder and garlic (as the size of the pot was enormous). We'll have leftovers for awhile...but that's great, because this freezes really well (like chili). A+!
