Greek Butter Cookies

Reviewed: Jan. 14, 2015
Really delicious, quick, and simple! The only change I made was to substitute orange extract for the almond, just my personal preference, I'm sure they would be good either way. I also made them round instead of the s shape, then dipped half of each cookie in melted chocolate and sprinkles. Very delicious that way, but they are also really good just plain if you're looking for something less sweet. I will definitely be making these again!

Marshmallow Buttercream Frosting

Reviewed: Dec. 18, 2014
Based on the recommendations of other reviewers, I tweaked the proportions a little: I used 1 1/2 cups butter, 2 1/2 cups powdered sugar, and a 13 oz jar or marshmallow creme, and it turned out to be a delicious, fluffy icing that I would definitely use again. I also used peppermint extract in place of the almond to go with some chocolate peppermint cupcakes, but I think almost any flavoring would work. One recommendation I would make is to definitely use unsalted butter. I didn't because I only had salted on hand, and the icing ended up slightly more salty than I like. Overall, I think this is a great, versatile recipe that is easy to tweak to suit your personal tastes.

Frosted Peppermint Mini Bites

Reviewed: Dec. 15, 2014
I used a different icing, so I can't comment on that, but the cake was delicious! I was nervous because the batter seemed so thin and runny, but it baked into a really moist, fluffy cake with just the right hint of peppermint. I will definitely make this again!

Smoked Turkey Wild Rice Soup

Reviewed: Dec. 10, 2014
Very hearty, flavorful soup. I followed the recipe exactly with the exception of omitting the celery and curry powder since I didn't have any on hand, and I don't think any changes are needed. Good use of leftover turkey, will definitely make this again!

Asian Chicken Sliders

Reviewed: Nov. 25, 2014
I enjoyed the flavor of this, and it was really quick and easy. The meat was sweeter than I expected, but the jalapeños and onions balanced it out nicely.

Perfect Double Chocolate Peanut Candy Cookies

Reviewed: Nov. 11, 2014
Delicious! I forgot to put the extra candies on the top after putting the cookies on the baking sheet, but I think it was fine without them. Probably would be great with them too. I will definitely be making these again.

Zucchini Chocolate Orange Cake

Reviewed: Sep. 9, 2014
Absolutely wonderful! This turned out moist and delicious, not too sweet, and that hint of orange made it perfect. Based on another reviewer's suggestion, I added about 1/2 tsp of orange extract to give it a stronger orange taste and it tasted great that way. I also omitted the nuts because I didn't have any, and I think it would be great either way. I will definitely be making this one again!

Zucchini Bites

Reviewed: Aug. 27, 2014
I thought these were delicious, and my entire family ate them, which to me is the definition of a successful meal. As other reviewers have said, there is endless room for variation, but I like the shredded carrot and zucchini; it's a good way to "hide the veggies" from picky kids (or husbands - my husband, who is notoriously finicky about vegetables, loved these because they just tasted like bacon and eggs). I will definitely make these again, and next time I plan to double the recipe so I can throw some in the freezer to pull out and reheat for breakfast on school mornings.

Whole Wheat Cinnamon Pancakes

Reviewed: Aug. 23, 2014
I'm not usually a big fan of pancakes but these are pretty good, and my kids (4 and 1) loved them! I added some fresh blueberries and about 1/4 cup of wheat germ; other than that, I followed the recipe as written and would definitely make them again.

Pumpkin Cream Cheese Muffins

Reviewed: Jun. 10, 2014
These were pretty good but I probably won't make them again because they were way too time-consuming for someone trying to take care of small children.

Cute Cranberry Tangerine Muffins

Reviewed: Jun. 4, 2014
Delicious! I will be making these again for sure. I made 2 small changes, I didn't have any fresh tangerines so I used orange juice and orange extract in place of the tangerine juice and zest. Aside from that I followed the recipe exactly and they turned out great.

Lisa's Favorite Carne Asada Marinade

Reviewed: Apr. 29, 2014
Good marinade, I would make it again. For my personal taste it wasn't quite spicy enough so I would increase the chipotle peppers or add some hot sauce or something next time, but overall I enjoyed it. I served it in corn tortillas with a corn salsa, sour cream, and sliced avocado.

Fiery Fish Tacos with Crunchy Corn Salsa

Reviewed: Apr. 27, 2014
Loved these and will definitely make them again. The salsa was delicious, I have never used jicama before but it added a nice crunch and contrasted well with the lime juice.

Peanut Butter Cereal O's

Reviewed: Apr. 23, 2014
These are delicious and a nice change from Rice Krispie treats. My kids love them and I feel like it's a good snack because you get some protein and fiber along with your sugar. I followed the recipe exactly and wouldn't change a thing. Will definitely be making these again, thanks for sharing!

Cinnamon Pumpkin Waffles

Reviewed: Dec. 22, 2013
My absolute favorite waffle recipe, my daughter and I eat them all the time. I 4 times the recipe, which makes about 3 dozen with my waffle iron, then freeze them and reheat in the toaster for a quick easy breakfast. I follow the recipe exactly and they have come out perfect and delicious every time.

Caramel Popcorn with Marshmallow

Reviewed: Dec. 22, 2013
Fast, easy, and delicious! Only change I made was using air-popped popcorn instead of microwave. I used 1/2 cup of unpopped kernels and had quite a lot of extra caramel, next time I will probably do 3/4 cup instead. I will definitely make this again, we made popcorn balls and they've stayed soft and delicious for a few days now.

Simple Whole Wheat Bread

Reviewed: Aug. 23, 2012
This was my first attempt at homemade bread and it turned out great! Very moist with a hint of sweetness from the honey. My family went through an entire loaf in less than 24 hours! I only used 2 1/2 cups of white flour instead of the 5 cups listed because I try to avoid white flour as much as possible.

Jerre's Black Bean and Pork Tenderloin Slow Cooker Chili

Reviewed: Aug. 23, 2012
This was delicious! Not quite as thick as a traditional chili, but I didn't mind that. If you wanted it thicker, you could drain the beans or leave the chicken broth out, but I liked it the way it was and thought it tasted even better reheated the next day.

Irish Soda Bread

Reviewed: Aug. 10, 2012
This was quick and easy to mix up and tasted good. I didn't really care for the taste of the caraway seeds so I would cut back or omit those next time, and I felt like 3 cups of raisins was a little too much, so I would cut back on those as well. I really enjoyed the taste and texture of the bread though, and would make it again with those changes.
