Banana Cranberry Bread

Reviewed: Dec. 7, 2002
Yummy! My kids really like this as muffins. I made 1 large loaf and 24 muffins. I used Blue Cranberry sauce (not really blue, has blueberries)found on this site. I was out of vanilla so I used lemon extract. It was very simple and a great way for the kids to get in some extra fruit and fiber without them knowing. Thank you!

Italian Pasta Veggie Salad

Awesome!! I do not add the mushrooms because my kids to not like them but I LOVE this recipe and so does my husband. Sometimes we add more like cucumbers, pepperjack cheese, cheddar cheese and pepperoni. Yum!

Best Green Bean Casserole

Reviewed: Nov. 29, 2002
This is the best green bean casserole my family has ever had. The cheese is a definate plus. Very simple and great tasting is always an A-plus on my list. I use more soup, another 1/2 can to make it creamier. YUM!

Day Before Mashed Potatoes

Reviewed: Nov. 29, 2002
YUMMY! I love being able to make foods ahead of time. This recipe is less tangy then another I have tried. With 4 children and 1 on the way I have been experimenting with "freezer cooking". This recipe will replace my other one. One hint if you are going to freeze. Freeze at the refrigerator stage. Make sure you fully thaw (in fridge overnight) before putting in oven. This helps with the consistency.

Baby Carrots And Brussels Sprouts Glazed With Brown Sugar and Pepper

Reviewed: Nov. 29, 2002
This is a really nice twist on two great vegetables. The second time I mad it my glaze was more like a sauce. I'll have to play with it to see what I did wrong. Leftovers are wonderful.

Maple Roast Turkey

Reviewed: Nov. 29, 2002
This is the second year I have used this recipe for Thankgiving. It is awesome! It is almost impossible to goof up, at least I have not been able to even if I forgot something or did it wrong. It still comes out YUMMY! I have used Apple Cider both years and I too have a liguid under the butter. I just use the apple butter as directed and then use some of the juice too. I baste often and have always had enough pan juices for gravy and never need to add more broth. The gravy is wonderful. I'm going to try this on a whole chicken too. Thank you for this recipe! *** I want to add. I am making this recipe again this year, my original review was in 2002. Last night I made my maple butter. I let it cook and reduce for over an hour. This morning it is all solid butter. I think the key is in the time you allow the cider/syrup mixture cook. I don't think I'll be using the Apple Brandy this year.

I made this for a potluck dinner get together. It was so easy and I used an apple slicer for the apples, even easier. I don't know about anyone else but I couldn't stop eating it!! YUM!
