This carrot cake was made using the SCC recipe. I followed it as it is, just adding a one more spoon of vanilla extract. The cake was REALLY moist, when I first tried it, it was a little too sweet for me. I think it was because of the pineapple can I bought, it was too sugary. BUT... today we tried it again, after refrigerated, and the cake tastes a lot better than yesterday :) .
The frosting recipe I used was Cream Cheese Frosting II ... (half recipe)
