Sam's Famous Carrot Cake
Amazing carrot cake! I made this cake yesterday, followed the recipe as it is, except that I added one more teaspoon of vanilla extract and did the milk+lime trick instead of buttermilk, all keeping the measures. To be honest, the cake is AWESOME! The only thing I noticed is that it might be a little too sugary, but I blame the canned pineapple I used because it comes with a sugary juice. Next time I'll try either to use natural pineapple or reduce the one a half cups of sugar to one.
I know some people might find this cake too heavy, I'd recommend to try reducing the amount of pineapple (half, maybe) since pineapple adds density & weight to the cake.
I frosted the cake with half recipe cream cheese frosting II ... it was delicious, my fiance and my neighbors loved it!!
