Peanut Butter Balls V

Way too much butter. This mix results in a soft slimy mess that cannot be rolled into balls. Very disappointed, I ended up doubling the peanut butter and sugar to get a mix that was workable. The PB balls ended up tasting great, but now I have enough to feed a small community.

Parsley Spinach Chicken Stew

The first sound out of my husbands mouth was Mmmm, so this get a five star from me! I did change the recipe a little bit, I opted to not add my parsley and spinach until I put in the potato - then I just put them on the top and let them steam for 10 minutes, then I stirred them in. I put in the entire little can of tomato past and only added one cup of water so my stew was just that, a stew - not soupy. I traded out the potato for a Jicama, which is a potato substitute (its sweeter and just delicious - even raw). I added a bay leaf and put my lemon juice in near the middle of the cooking time rather then at the end.

Onion Roasted Sweet Potatoes

I just made and served this for supper - I reduced the recipe to make just one sweet potato and I love it! You still get the sweet of the potatoes, but with the savoury of the onion soup mix - delicious. My soup mix was a Knorr Lipton Onion Roasted Garlic. My only note is that my potatoes were just a smidgen over done at 30 minutes so if you make this, make sure you check them at the 20 to 25 mark.

Thai Style Shrimp

Wonderful recipe - I did have a problem with getting the first ingredients to turn into a paste - but it did not matter, still cooked up great. It was a little runny as well, but with the rice - it is perfect. If you are excepting heat from the jalapeno, you best add more then one as their isn't any heat in this dish. I added at the very end with the basil, some snow peas, green onion, and some pre cooked fresh asparagus - and served on coconut rice. When I make this again I will double the garlic, ginger root, and jalapeno for more umph.
