High Temperature Eye-of-Round Roast

This recipe is amazing. I just made it for Easter to go along with a pasta dish. My son and I are on a diet so we couldn't eat the pasta. I decided to try this roast. I was really nervous about turning the oven off after 28 minutes but I just trusted all the people here and went for it! I made a four pound roast so I followed the 7 minutes a pound at 475 degrees and then turned the oven off for two and a half hours. The big reveal was that the roast was pink in the center and very juicy..My son took a piece that I sliced and said it was so delicious and tender. It was! This will be my go to recipe..It was so easy!
