My mother in law was a great cook ain New Orleans. In college worked in a cajun restaurant for 6 months. I learned so much. Now I am an engineer. I love to cook at home when I am in a good mood and the weather is cool.

Chef John's Italian Meatballs
I have tried many recipes, and was very happy to find this one that did not disappoint. These were tender (yes- finally), a little spicy, flavorful, not mushy. The changes I made: Italian sausage instead of pork, Italian seasoned breadcrumbs, Pecorino Romano cheese instead of Parmesan, added, 1 teasp onion powder, 1 teasp garlic powder, let mixture sit in fridge overnight, rolled the balls in breadcrumbs before baking, baked on parchment paper. These were beautiful.

Baked Buffalo Wings
OMG!! - I make baked wings fairly often. These are perhaps the best I have had ANYWHERE. Only changes are I brined the thawed wings for ~ 3 hours before drying, dredging, coating, and baking. I have now found my wings recipe. Thank you for posting this recipe!

I would not add honey. It is too sweet and clashes with the garlic.
