Buffalo Style Chicken Pizza

My girlfriend and I made this with ranch dressing (and not NEARLY a whole bottle, just enough to have a layer like you would do with pizza sauce on a regular pizza). We also used a rollout pizza crust from a cardboard tube like you would find in the refrigerated case at your grocery. It was DELICIOUS although the thin crust combined with the juices made it a tad soggy. A thicker crust might make up for that. We will definitely be using this recipe again!

Coffee Liqueur Raisin Cookies

Doesn't taste nearly as much like coffee as I would have guessed/hoped but still a QUALITY recipe. I halved it (as such) but also lightened it up a bit. I substituted light margarine for the shortening but would have also liked to have tried applesauce instead. I used non-stick non-fat cookin spray instead of greasing the pans (which worked like a charm). I switched half the brown sugar for an equal amount of Splenda cooking sweetener. Also since I was halving the recipe and 3 eggs doesn't "halve" neatly, I just used a whole carton of egg substitute (which is the equivalent of 2 eggs). With all those changes the cookies came out very flavorful and cake-like. I do prefer chewey cookies but that's the price you pay for excluding the shortening. I included the walnuts but not the white chocolate. Making these changes yields a very tasty light cookie. I did cook half on an air bake pan and half on a regular pan and the air bake ones turned out a little less than my liking but otherwise still tasty.

Shrimp and Crab Bisque

I substituted the salt with Old Bay and fat free half and half to lighten it up a little. My roux was a little strange but it turned out ok. The FLAVOR of this bisque is FANTASTIC. Truely restaurant quality. However I used flake style imitation crab and I didn't care for the texture it gave the bisque. Next time I make this I will use lobster meat instead to see how that tastes. GREAT recipe... thanks!

Black Bean and Salsa Soup

Wow this is good. Amazing for a recipe with so few ingredients. I was certainly skeptical but I figured what the heck because I like fiber-rich food and I can my own salsa so I have plenty sitting around. I made it with zero alterations and couldn't get enough. Thanks for such an EASY, HEALTHY and DELICIOUS recipe.

Waffles I

I made this on the spur of the moment this morning before getting my son ready for daycare. Absolutely simple to make and tasted great. I substituted Egg Beaters and used half whole wheat flour and half all-purpose flour. This turned out as good if not better than the boxed waffle mixes I have used in the past. Definitely will make this again.

Bread Pudding II

This turned out delicious! I "doctored" it to make it even healthier. I used Whole Wheat bread, Splenda, and egg substitute. I also soaked my raisins in Jim Beam to prevent them from burning and getting hard... worked like a charm and added a great tasting subtle kick to this recipe.

Grandma's Corn Pudding

I like to try and make things low-fat and healthy so I take recipes I like and alter them. This was a perfect example. I used 1 egg and 4 eggs worth of egg substitute. Butter is still healthier than margarine so I stuck with that. I also sprayed the dish with no-fat cooking spray. This dish STILL comes out fantastic and much more lowfat and heart-healthy.

Chocolate Cavity Maker Cake

The taste of this cake was fantastic HOWEVER even though I followed the recipe to the letter, it was pretty burnt when I pulled it out of the oven. I think next time I will either lower the temperature a bit or cut the baking time a little bit...not sure how else to eliminate the burnt bundt

Cafeteria Carrot Souffle

Never had Carrot Souffle before so I didn't know what to expect but I have had corn souffle so I decided to try it out. It was a HUGE hit at the party we had and almost everyone had seconds which is pretty remarkable for my picky family. Everyone asked for the recipe so not only will we make it again but our extended family plan on sharing it!

Baked Oatmeal I

I had no expectations from this recipe going in but had lots of oats around my house and wanted to use them up so this looked as good as any. WOW! What a great surprise. I loved this. If I had more time before work I would have eaten the whole pan of it. My wife had a so-so reaction to it but I thought it was fantastic. I rarely sit and eat breakfast before work but I had to have two bowls of this. Very good!

Six Can Chicken Tortilla Soup

This soup was good. Not great, but good. If I hadn't topped it off with cheese and tortilla chips it would not have even received a 4 star rating. If you read most of these reviews, you will find that most of the people added a little something extra...you almost have to because the recipe as it is can only be considered a starting off point. It definitely needs a little something extra. That said, it was one of the quickest and easiest meals I have ever made.

Betty's Sugar Cookies

I substituted the shortening with butter and these turned out very well. I also made a batch with 2 teaspoons of anise EXTRACT and that made them VERY tasty (but no longer a straight sugar cookie anymore)

Melt - In - Your - Mouth Shortbread

What a simple and delicious recipe. You do have to be very careful with them because it is easy to burn them. I burnt about half of them. All of the ones I made using an Airbake cookie sheet turned out fine but regular cookie sheets made them extra crispy. Very delicious though.

Big Soft Ginger Cookies

These are FANTASTIC. My wife was a little apprehensive of trying them but has hooked after a little bite. Needless to say they don't last long. They are very simple to make and we had all the ingredients around the kitchen.

Double Layer Pumpkin Cheesecake

Ok, this is about the best thing that has ever come out of my kitchen. My son LOVES it, I LOVE it, it is fantastic. I did bake it for 40 minutes and it still probably could have used another 5 minutes but other than that, it turned out perfect. I can't wait to make it for Thanksgiving.

Banana Banana Bread

Cincinnati Chili I

I made this chili on the stove and transferred it to a crockpot on low for 5 hours and it was TERRIBLE! I make all my chili in a crockpot (never Cincinnati style chili) and I have never had a chili that didn't taste better the longer it is allowed to simmer but this was unedible. I LOVE Cincinnati style chili but this tasted nothing like any I have ever had including Skyline. I will not make this again.

This recipe is certainly an acquired taste. Both my wife and I tried it and thought it was an average recipe. Nothing spectacular that would make me want to make it again. We halved the recipe and still half of what we made went to waste. The flavor is not for everyone.

Award Winning Peaches and Cream Pie

My wife and I made this together cutting prep time in half and also using a 10 INCH DEEP DISH PIE PAN. This is very important as the crust came out absolutely perfect, not runny like others have said. Everyone thought this was the best pie they have had in quite some time at our July 4th gathering. We are going to try other fruit such as pears, apples, strawberries, or blueberries for our next attempts. Fabulous recipe!!!
