Wine Soaked Mushrooms

I really liked this recipe, although I did alter it by adding shallots, using cremini Mushrooms and reducing the amount of wine a bit. The thyme added a very nice flavor. I actually prepared this for a vegetarian meal and everyone really enjoyed them.

Clark's Quiche

This is my FAVORITE quiche recipe by far. I make it often and I modify the recipe with the ingredients that I have on hand. The last one I made with only vegetables for Lent so I upped the spice and added a bit of cayenne to give it a kick. I could eat this every day if it wasn't so caloric, lol.

French Leek Pie

Very tasty recipe. I would give it 5 stars for taste but as other reviewers mentioned, my pie never set up when even slightly warm. I believe that that can be easily fixed with a tablespoon of butter or a small quantity of a blonde roux added. I also used the entire leek even most of the green I just started sauteing them a bit earlier than I did the whites which caused them to lend the pie a full rich flavor. I will DEFINITELY make this again with just that small change.

Linguine with White Clam Sauce II

This is a really good, fast and economical recipe. Like others I added fresh lemon juice and crushed red pepper flakes for more kick and I added fresh spinach to make it a one pot meal. Yum!

Taco Seasoning II

This is a good base recipe. I added more cayenne and 1 tablespoon of Lawry's seasoned salt to suit our palate. It is much cheaper to make than buying the packets.

Easy Pumpkin Muffins

This is a real winner! I upped the spices and added a 1/4 cup of applesause to loosen the batter a bit then topped them with oats for a bit more fiber. This recipe could not be easier. The muffins were quite soft and sweet.

Couscous with a Kick!

This is a fabulous salad. Very flavorful and it keeps well in the fridge. I generally prepare a warm couscous with roasted chicken for dinner and then prepare this tasty salad the next day for lunches and snacks. Thanks for sharing.

Spicy Rapid Roast Chicken

This is THE roast chicken recipe, particularly the roasting method. I needed to cook 10 lbs of chicken pieces for a chicken dinner and this was the best way of keeping the pieces moist and juicy with crisp skin. I brined the chicken briefly and added more salt, rosemary, cayenne and other spices suited to our palate. The chicken came out perfectly with little muss or fuss. Next time I will add potatoes, carrots, celery and garlic for a complete meal in a pan.

Caesar Salad Supreme

Very flavorful dressing. Extremely easy to prepare and wallet friendly to boot. I will use just a tad less may next time and add a drop or 2 of tabasco for kick, but overall my family loved this.

Spinach Salad with Warm Bacon-Mustard Dressing

This is truly a 5 star steakhouse style salad. It is easily adaptable to items on hand. I left out the cheese and almonds to save a few calories and fat but I did you the bacon drippings to saute the shallot and garlic. I have used different vinegars depending on what I have on had, sometimes white balsamic, sometimes rice wine, sometimes white wine vinegar. My husband and son raved!

Quick and Yummy Hummus

This a great base recipe to alter to your personal taste. I love that it uses common pantry items that I always have on hand. I did add more sea salt and tahini to taste. I can imagine making this weekly.

Strawberry Oatmeal Breakfast Smoothie

This is a really good recipe. I use slightly less than 1/2 cup of oatmeal finely ground and add a few packets of sweetner. I also used 2/3rd cup of unsweetened almond milk because I wanted the smoothie really thick. If you allow the smoothie to sit for a few minutes before serving it gives the oatflour time to absorb some of the liquid which eliminates the "chalky" taste that some complain of. This is definately going in our rotation.

Banana Crumb Muffins

Excellent recipe! I added cinnamon, nutmeg and vanilla as others suggested and also added a handful of butterscotch chips. YUMMY! I only had the Splenda Brown Sugar Blend in the house so that is what I used in the topping. I also used all Baking Soda since we were out of baking powder and they turned out fine.

Melt-In-Your-Mouth Meat Loaf

I absolutely LOVE this meatloaf and I am not the biggest fan of meatloaf in general. I add a packet of onion soup mix, garlic powder and a bit of oatmeal in place of the breadcrumbs because I love the texture. Double the topping (not the brown sugar though). My husband raves each time I make this.

Honey Mustard Salad Dressing

This is now my go to Honey Mustard recipe. It is breeze to whip up and keeps beautifully. Using FF mayo doesn't appear to alter the taste much and adds a nice body. I use rice wine vinegar and shallot in place of the onion.

Panzanella Salad

We really enjoy this salad. I do cheat by mixing in store bought seasoned croutons in place of the toasted bread to the vegetable mix just before serving. I also use grape tomatoes, baby mozzarella, and fresh basil.

Smothered Beef Short Ribs

With just a little tweaking this became a 5 star dish. I seasoned a mixture of short ribs and stew meat little heavier to suit our personal taste, browned the meat on the stove top and transfered to a crockpot. I also used just 3 cups of broth and thickened my gravy with one cup of a flour water slurry. Served it with rice, cabbage and insalada caprese. My family raved.

Fried Cabbage with Bacon, Onion, and Garlic

Yummy, yummy, yummy. I replaced the 3 tablespoons of salt with seasoned salt added to taste and I cooked the cabbage on medium until just tender. Definately a keeper.
