Great salsa! For those looking for a little more heat, I substituted a habenero pepper instead of the jalepeno (DO NOT use more than one). I also grilled the fresh pineapple slices and the red onion before dicing them and tossing them into the mixture. Once chilled, it got rave reviews at our Cinco de Mayo party.

Grilled Portobello Mushrooms

SOOOO good! I used olive oil instead and included a little salt and pepper. One question: the recipe states to reserve the stems for other use. What other use? I may chop them up finely and add them to the mixture next time around.

Candied Carrots

To kick it up with some extra flavor, I add a 1/4 cup of orange juice to the brown sugar/butter mixture. You can also try adding in a tablespoon of powdered ginger. This is a great way to get your young kids to eat their carrots!
