Slow-Cooker Chicken Tortilla Soup

This is AMAZING. I've made it twice now, and I added one extra can of broth to make it a bit more soupy. My family loves this and my mother-in-law even said it was the best soup she's ever had! GASP! Will definitely be making this one often!

Pumpkin Chocolate Chip Cookies III

This recipe is really good. I made it last night and doubled the recipe. I used half wheat flour and half all-purpose. I also used half vegetable oil and half applesauce. I used 3 1/2 t cinnamon and 1 t each of cloves, ginger and nutmeg (keep in mind that I doubled the recipe). I also added some red food coloring as others suggested. I cooked them at 365 for 12 1/2 minutes. Next time I make this, I will use about the same amount of cinnamon, but will cut in half the amount of the other 3 spices. The cookies are awesome, but the spices are a bit overwhelming. I also think I will reduce the amount of chocolate chips I use by maybe one fourth. Call me weird, but I think they are a bit too chocolatey. I love the taste and texture of the pumpkin and think it would be a bit more enjoyable with a little less of the chocolate chips. Overall, though, fantastic recipe!

Curry Kabobs

Incredible! I doubled the curry powder as others had recommended. It was perfect. The chicken was so moist. I also grilled some other veggies (tomatoes, zucchini, onion - along with the mushrooms) that I had marinated with another curry marinade that was meant for veggies. Next time I think I will just double this marinade and put the veggies in along with the chicken. So amazing - thanks for the great recipe!

Grilled Lemon Herb Pork Chops

Fabulous! I used fresh oregano instead of dried because I have some oregano in my garden. It was wonderful! This is a great recipe for a summer barbeque.

Bean Soup With Kale

This was REALLY good! I had never had kale before, and wasn't sure what to do with it when I received it in my produce co-op box. This was the perfect way to use it up. I was surprised at how sweet-tasting the soup was. I'll definitely be making this again.

I took the advice of others and added some spices - garlic powder, oregano, thyme, and salt and pepper. I also omitted the milk and doubled the cream of chicken soup. It tasted really good!
