St. Louis Toasted Ravioli

Reviewed: Dec. 14, 2010
I made these as a party appetizer and they were a HIT! I have to admit, I par-boiled them b/c it seems they would have been very tough had I not. After boiling, I laid out on a sheet pan so they weren't touching and refrigerated until cool. I also dredged lightly in flour before egg and breadcrumbs. It really makes a nice crust. I'm glad I did these extra steps, b/c I would have been disappointed if they came out any differently than they did.

Sour Cream Apple Pie Deluxe

Reviewed: Dec. 10, 2010
a very attractive pie, and VERY tasty. Sour cream cuts the sweet. My husband, who is not a pie guy, really enjoyed this and thought I was very clever!

lovely recipe - I halved it just to make a dozen, but it came out great. Will make again for sure.

Meatball Soup

Reviewed: Oct. 4, 2010
more like a meatball chowder than a soup if you put uncooked pasta in... good flavor, but will probably use cooked pasta next time so it doesn't get starchy. My husband liked it!

Cheese Ravioli with Three Pepper Topping

Reviewed: Jul. 5, 2010
very good. I had no problems with the amount of broth, just be patient and let it reduce. I did add a little chopped tomato, nice and light. it cuts the richness of the ravioli nicely.

Chicken O'Neill

Reviewed: Mar. 22, 2010
I really liked this! Not sure why other reviews said not much flavor - I think you really need a good cajun spice, and good italian dressing... oh, and I used canned tomatoes instead of fresh b/c I like pasta a little saucier than not.

Faken (Veggie Bacon)

Reviewed: Mar. 6, 2010
all in all, not bad. Obviously, nothing's going to be EXACTLY like bacon, but if you go in knowing that, you are going to come out with a delicious sandwich "meat" for a blt, or for a scramble. Very good overall. I love the salty smokey maple flavor, and it made our home smell like we were cooking bacon! Also, it's nice not to be a total slave to the processed, frozen, expensive meat substitutes that are sold at the market. I will make again - maybe tonight!

a few people mentioned good texture, but that's why I gave it3 stars - I prefer a softer more tender pancake. back to the drawing board...

Quick Skillet Chicken and Macaroni Parmesan

Reviewed: Dec. 6, 2009
a really nice skillet meal without that hamburger helper box and the salt that comes with it! I used crispy chicken for some texture and added it at the end. Kind of a chicken parm skillet.

Heavenly Hot Dog Sauce

Reviewed: Jun. 22, 2009
exactly what I was looking for - Unfortunately, I ran out of tomato sauce in the pantry, so I used a little condensed tomato soup and eliminated the sugar - just as good I'm sure!

Chicken Piccata II

Reviewed: Dec. 23, 2008
Loved the texture of the chicken and the flavor of the sauce it makes. I had to add a little broth because it was a little salty and lemony for my taste, but that was a small addition to a great recipe. Will make again!

Vegetarian Tortilla Soup

very good! I cut the recipe in half, because it seemed like it made enough for an army, and it still made a ton. Even better the second day!
