I made a few alterations as recommended by other reviewers: 1 cup flour, 1 cup whole wheat flour, 3/4 cup brown sugar, 2 whole eggs, 1 cup applesauce (in place of apple butter) and added toasted wheat germ to batter. In addition, I added 1/2 c. puréed chickpeas (great suggestion by another reviewer- adds protein!) and 1/4 cup buttermilk, and mixed in about 1/2 c toasted sunflower seeds instead of nuts. They turned out just fine, and will be used for quick breakfasts and lunch snacks when school starts!
