Prosciutto Parmesan Pasta

This is definitely a go to quick dinner choice! I've made some changes per suggestions. I've replaced prosciutto with bacon, added sliced green pepper, also added grilled chicken breast strips and season to taste. My seasoning includes garlic powder, salt, parsley and black pepper. This is not a diet recipe or watching your calories!! It is hearty, full of flavor and a total comfort food. Enjoy!

Ziti with Italian Sausage

Wow the flavor here is fantastic! I made the following modifications: I have a household of 4 boys and a hungry dad... I used 2 pounds of mild Italian sausage, instead of mushrooms I used sliced zucchini, added 1 more small can of tomato sauce and instead of garlic powder used garlic salt as well as using 3 kinds of cheeses. Flavor was great, prep time is minimal and will use again!

Arroz Con Pollo Mexicano

I really liked this dish. I did make some changes as I have 4 boys who eat like it is the last supper. I used thighs, drumsticks and breast. I seasoned them with salt, pepper, garlic powder, sazon (Goya), season salt and parsley then lightly fried them. I doubled the rice and used 5 cups of water. It takes WAY longer than 15 minutes mine took about 35 minutes to be cooked. I also added onion while browning the rice. Flavor was great and used tostadas and queso fresco to complete the meal.

Mexican Lasagna

This was a pretty easy recipe to follow as well as alter and enjoy. We used all ingredients as followed only omitting the olives and using light sour cream and whole wheat lasagna. I made the beef and beans mixture and included taco seasoning along with the seasons called for. I layered each layer with pepper jack slices and topped it off with A Mexican blend shredded cheese (Monterey Jack, cheddar). I added 1 1/2 cup of water and a 8oz can of salsa. All of it came out nicely and yummy. It was a hit and will save to make again. I think next time I will add salsa to the bottom to give my pasta moisture down there as well as in the middle. My pasta was a little burned but that was my fault. You won't be disappointed.

Mean Green Guacamole Salsa

I doubled all ingredients and flavored to our liking we absolutely loved it and got compliments on it. So easy although I agree that making it in batches makes for less of a mess.

Beef and Broccoli

What a quick and easy dinner! Don't let the tomato fool you! I took the advise of fellow cooks and although I doubled ALL ingredients to feed my teenagers I still only used 1 can of the soup. It came out PERFECT. Prior to putting the meet in the pan I let the oil heat up and slice up some onions. I also left out the pepper flakes. I made white rice and used frozen broccoli adding it LAST after the meat and spices had cooked thoroughly. My kids LOVED it!! Doubling leaves enough for lunch leftovers and the kids really like the veggies and meat. I will be using this again.

American Shepherd's Pie

My kids and hubby liked it. I did change a few things. I seasoned the meat to my families liking which included garlic, salt, pepper and a bit of worchestire sauce. I added green peppers with the meat and onions and celery. I used cream of mushroom instead and added a can of corn (drained) everyone liked a great quick meal with some yummy rolls or corn bread make a hearty warm meal for cold rainy Seattle days!

Savory Chicken Breasts

This was so quick and easy and YUMMY!! I used cheddar and also a "mexican style cheese mix" as well as adding cooked bacon bits and some chopped onion! Came out FAB!!! I made stove top stuffing chicken flavor, once the chicken was out of the oven I served stuffing and placed the chicken over the stuffing. It was SOOO yummy and filling. All kids and hubby ate it and asked for more! A new fav epescially if you are in a bit of a hurry.

Mexicali Pork Chops

Very quick and easy. Inchanged it up a bit by adding ground cumin, and a can of Mexican salsa and water whileni cooked porker chops much tender and juicer. I made a side of Spanish rice and served with tortilla.

Great and easy. A tad bland if spices are not added. I added Italian seasoning and fresh parsley as well as ground beef in the sauce. Although I did not take the advice I would suggest to also place pasta in a bowl of warm water as it will cook in oven with sauce.
