Ziti with Italian Sausage
Wow the flavor here is fantastic! I made the following modifications: I have a household of 4 boys and a hungry dad... I used 2 pounds of mild Italian sausage, instead of mushrooms I used sliced zucchini, added 1 more small can of tomato sauce and instead of garlic powder used garlic salt as well as using 3 kinds of cheeses. Flavor was great, prep time is minimal and will use again!

Arroz Con Pollo Mexicano
I really liked this dish. I did make some changes as I have 4 boys who eat like it is the last supper. I used thighs, drumsticks and breast. I seasoned them with salt, pepper, garlic powder, sazon (Goya), season salt and parsley then lightly fried them. I doubled the rice and used 5 cups of water. It takes WAY longer than 15 minutes mine took about 35 minutes to be cooked. I also added onion while browning the rice. Flavor was great and used tostadas and queso fresco to complete the meal.

Mexican Lasagna
This was a pretty easy recipe to follow as well as alter and enjoy. We used all ingredients as followed only omitting the olives and using light sour cream and whole wheat lasagna. I made the beef and beans mixture and included taco seasoning along with the seasons called for. I layered each layer with pepper jack slices and topped it off with A Mexican blend shredded cheese (Monterey Jack, cheddar). I added 1 1/2 cup of water and a 8oz can of salsa. All of it came out nicely and yummy. It was a hit and will save to make again. I think next time I will add salsa to the bottom to give my pasta moisture down there as well as in the middle. My pasta was a little burned but that was my fault. You won't be disappointed.
