Whole Wheat Pumpkin-Applesauce Muffins

Easy and delicious muffins. I don't feel too guilty about eating them. I baked half the recipe by the instructions and added about 2 Tbsp of ground flax to the rest. I will probably add 1/4 cup flax the next time just to add some fiber. I might also cut down on the oil and sub applesauce to make it a touch healthier.

Sauteed Apples

Delicious apples to top pancakes, ice cream or waffles. The syrup created by the water/cornstarch mixture is excellent. It can be done with any kind of apples. Some ginger also adds a nice touch.

Fresh Southern Peach Cobbler

This recipe was easy and delicious. I upped the cinnamon and added ginger to the biscuit-y mixture. Also baked it in a cast iron skillet. One thing to note- this should definitely serve 6 and not 4 people.

Unbelievable Fish Batter

Waffles I

Updated this review to 5 stars after trying another waffle recipe and remembering how good this one is. Very good waffles. They took a while to crisp up on our waffle iron but it is a solid recipe. The waffles freeze very well and toast right back up in the toaster oven.

Amazingly Easy Irish Soda Bread

Delicious, moist and addicting. I am not convinced that it is authentic, but it's incredible. I did add raisins but it was incredible. All the kids at the preschool where I work look forward to this annual St. Patrick's Day treat. It comes out like a big, moist, buttery biscuit.

Slow-Cooker Corned Beef and Cabbage

Really easy. Put it in the crock pot St. Patrick's Day morning before leaving for work. Pop in the veggies when you get home and enjoy a delicious dinner. This will be our go-to recipe. We did not bother with the beer.

Best Chocolate Chip Cookies

Awesome recipe for cookies that rise a bit and then collapse. Exactly what I think of as a traditional chocolate chip cookie. They are wonderful with or without the nuts. I used pecans and half min chocolate chips because that's what we had and they were great. This recipe will also work if you replace up to half of the flour with whole wheat, or as another reviewer mentioned, ground oatmeal.

Grandmother's Buttermilk Cornbread

Great cornbread recipe and really easy. Can be adapted easily to desired sweetness. I also don't usually have buttermilk on hand so I just use regular milk (skim, whole or whatever we have, even soy) and mix it with 1 T of white vinegar. I usually do that as my first step and by the time I get to adding the baking soda to it, it has curdled enough.

Chicken Lo Mein

It's pretty good but very time consuming. The chicken marinade worked wonderfully. The recipe was easy to follow and the sauce came out well (and it helped to have it prepped from early on.) I added some broccoli and egg to it because I wanted to clean out my fridge. I would recommend making the recipe and would make it again myself.

Fluffy Pancakes

This is the best pancake recipe ever. I have tried a few recipes and pancake mixes since discovering it but always regret it. These are just the lightest, fluffiest, best tasting pancakes in the world. To make it a little healthier, I usually use canola oil in place of the butter and replace some or all of the all-purpose flour with whole wheat flour. The recipe holds up great to both modifications. If you're looking for the perfect, easy, go-to pancake recipe, look no further.

Delicata Delish

The recipe came out great but I made a few modifications. Instead of delicata squash, I used zucchini because it was on sale at the store. Olive oil was substituted for butter. I also added some finely chopped mushrooms to the Quinoa mixture. The recipe was truly delicious and easy to follow. I will definitely make it again.
