BLT Dip

Thought this was good, but didn't "wow" me either. I always use low-fat Miracle Whip since I don't like mayo. And I used grape tomatoes - can't imagine the very liquidly middle parts of a whole tomato in this. (Paper towel or no.) It could use a bit more bacon and less tomato. I thought about 1/4 the recipe was a good "snack" just for me and don't get how this is 16 servings unless everyone just has a taste. (Hence, people doubling it I guess.) And while it is good, no it doesn't taste like a BLT. The lack of lettuce isn't a huge deal, but it's too much mayo for a real BLT.

Mashed Potato Quesadilla

First off, I already use 1% milk, low-fat margarine and low-fat/no-fat cheese for nearly everything, so even with the bacon, these simply just weren't that fattening. I was a bit unsure of the mashed potato concept, but they were surprisingly good. I felt they were a 4.5 and knocked it down to the 4 just because they were a bit of a hassle. (I've never found heat n' serve bacon to really save a lot of time and don't have pre-made potatoes around. So certainly not a 15-min prep and also the potatoes a bit of a hassle to spread.) I wondered if I could get away with not frying them, but that holds them together, and also makes them slice into nice-looking wedges that are easy to handle. I used 10" tortillas and they only filled half that many and seemed like they'd only fill 2/3 of the 8" ones. (Not sure how anyone had left-over filling.) I agree with quasinaught that they taste *nothing* like perogies, which in my case is a good thing because I dislike them.

Black Bean and Salsa Soup

This *sounded* good but in the end I thought a bit on the boring side, especially when I was working a second bowlful of it. Yes it was very easy but that's about all.

Tortilla Soup

This was OK but certainly nothing exciting. I've definitely had better tortilla soups. It taste just a bit too much like eating enchilada soup and needed, I don't know, something. I don't feel it was worth making again.

Sorry, but I thought this terribly boring. I don't quite comprehend the concept of rating THIS recipe by substituting so many things that it's an entirely different recipe. But THIS recipe certainly doesn't "have it all."

Jalapeno Chicken Enchiladas

These were very good! I hate chopping up chicken, but they were pretty easy from there. I really liked the soup/sour cream combo. (And for those who can't believe it got any 5's, perhaps the rest of us just liked them and weren't looking for "authentic.") I had no trouble with left over filling. I used 10" tortillas and filled them how I wanted, and it took about 12 of them. They were also very filling.

Very easy to make. Good stuff, but maybe not "great." (More like a 4.5) A good amount of spiciness. Made it as is, except I don't have fresh cilantro on hand.

Made exactly as is. I liked this pretty well the first time I made it, possibly because I was just in the mood for something like this. My brother had been making beans & hot dogs, and I hadn't had that for a while and was getting the urge. However, the second time I didn't quite like it as well. I think the vinegar and Worchestershire sauce are a bit much, and despite a couple of others saying they were exactly like Beenie-Weenies, I don't think so. But it's super easy and gets points for that too.

Black Bean and Couscous Salad

Pretty easy to make. I used half the green onion - 8 just seemed like way too much. The couscous seemed a little gunky to me, which I think was due to a lack of liquid, which I will increase a bit next time. The end result didn't seem this way, so maybe adding the dressing helped this somewhat. A bit reminiscent of tabouleh. It was pretty good, but not "great." I also tried this stuffed into flour tortillas, which I liked and also made it more like a filling lunch.

Cha Cha's White Chicken Chili

No jalapenos here. They aren't just hot - I don't like the flavor. So of course it made it a different kind of spicy, and not too hot, and had a flavor all its own. I've always liked white chili and this is a super good one! I probably should cut back on all that fattening cheese but, well, it's good. :-)

Chicken Salad with Bacon, Lettuce, and Tomato

This was pretty good, though maybe not quite as good as I expected. I left out the avocado since I don't care for it, and I prefer iceburg lettuce. Although I didn't end up liking it on the lettuce anyway and ate the rest without it. It seems like it ought to be easy, but I dislike chopping stuff, so bit of a hassle from my point of view.

Slow-Cooker Chicken Tortilla Soup

Wonderful! Cooking chicken in the crock is about the best way to go and makes it super easy to shred, something I would normally despise doing. (My chicken was also frozen so I stuck it in with some of the liquid stuff and let it cook all night first.) I didn't use the green chilies cause I don't particularly care for them and I think that would have been too hot. I think also about half the tortillas were enough. I did start out baking the tortillas but they got soft after being in the soup anyway, so I used the rest as is. Super easy. I would say I think I'd like the chicken pieces bigger and would probably just rip it into pieces next time.

Cheddar Bruschetta

I've never had bruschetta so I can't make a comparison to a "true" one. I made this as is, except that I added the tomatoes on top after baking because I can't handle fresh tomatoes cooked. Had a good flavor but noticed I couldn't eat very much at once. I also think everything needs about doubled for that amount of bread - just didn't seem like there was much on the bread.

Southwestern Pasta Salad

I thought the instruction to add the dressing and then let it cool was a little odd - I've never done that before. But I followed that instruction and it seemed to keep the pasta moist and put the flavor in the pasta rather than just any old where it lands. Also made it a bit of an odd color so it certainly looked a bit different. In the end, I thought was OK but nothing terribly exciting. Not a bad way to use up some ingredients.

Aussie Chicken

I was a bit leary of this recipe. I like honey-mustard in small amounts and there was just SO much of it in this recipe. I used probably about half the sauce (left the rest in the fridge to use for something else later), and it still seemed like a lot. But it was really good and I was quite surprised. I think actually the cheese made a difference cause I'm a cheese lover. Left off the mushrooms since I dislike them. Not only could the sauce be cut down, but I don't really get the point of the corn syrup. Honey is sweet enough. I think I'd leave that out next time.

Vegetarian Tortilla Stew

Yummy. :-) Since I'm not a vegetarian, I used chicken bouillon and real cut-up chicken in it. I make plenty of non-meat dishes, but also didn't see a reason to find veggie chicken just to keep it "official." I also have never purchased green enchilada sauce and just used red that I already had. It was a bit, well not too spicy exactly, but just tasted a bit too much like enchilada sauce soup. I will try adding more of the water/bouillon next time to try to drown that out a bit. I didn't down-score it cause of that, since I'm the one who substituted w/red.

Chicken Pasta Salad II

This isn't anything special, but fairly good stuff and fairly easy to make (even though I hate chopping stuff). What I liked was that it was a great thing to take to work that was reasonably filling & didn't have to be microwaved. And the pasta seemed like the right amount, for a change. (Although I wouldn't call mixing Italian and mayo "genious" since I've seen plenty of recipes that do this - it's just an easy way to tang up the mayo a bit.)

Make Ahead Lunch Wraps

Sorry, but I just don't get the appeal. I thought they were boring and dry, even with the cheese, which is what I assumed would "make these." They were also messy to eat because they just fall apart. I couldn't even easily eat them when trying to cut them into pieces instead of picking them up. Made even worse at work when difficult-to-eat just isn't cutting it. I only made 1/4 the recipe and I'm glad of that, though I did finish them off.
