Easy Meatloaf

I made some modifications. I read the reviews to saute the onions first, but I decided to grate the onion instead. It definitely intensified the onion flavor without giving me large, noticeable chunks of uncooked onion in the finished meatloaf. I also added a few dashes of worcestershire sauce, and a bit of garlic powder to the meatloaf mix. Next time I make this, I might use the meatloaf meat blend of veal, pork and beef for more flavor.

Pita Chips

Spraying the chips with olive oil cooking spray and then seasoning them afterwards will save a lot of calories. Just 1 tablespoon of olive oil has 119 calories. There are EIGHT tablespoons in 1/2 cup!!

Mom's Favorite Baked Mac and Cheese

I doubled the recipe because I used a 16 oz box of elbows and found that the 4 cups of sharp cheddar produced a very greasy and oily dish. Next time, I will cut back on the amount of cheddar and use either gruyere, fontina and/or monterey jack.

Caramelized Baked Chicken

This is delicious, BUT cooking the sauce on top of the stove first is a MUST in order to get the sauce to caramelize in the oven. You can also substitute your favorite store-bought BBQ sauce for the ketchup for a nice, smoky flavor. I used 3/4 cup BBQ sauce, 3/4 cup honey, 1/2 cup soy and chopped garlic cooked on the stove for about 15 min. I have used this over skinless boneless breasts as well as chicken thighs. Pour the sauce over the chicken and cook 375 for about 45 min. Terrific!!

Chicken Stir-Fry

For the reviewers concerned about it being overly salty, try low sodium soy sauce. It really helps cut down on the saltiness of the marinade. I varied the veggies, using red pepper, edamame, scallions (instead of onion) and celery. Yummy!

Brown Sugar Smokies

I'm glad I read other reviews before making these. THE COOKING RACK IS A MUST!!!! I also highly recommend soaking the skewers in water for about 10 min. if you choose to use those. I wrapped the smokies in the bacon, and then rolled them in brown sugar before putting them on the skewers. Then, I sprinkled more brown sugar over them after putting them on the rack. Don't forget to put foil under the rack as well. I baked them for 30 min. at 350, then I flipped them, raised the temp to 400 and baked another 15 min. No broiler time necessary. They came out crispy and delicious.

Three Cheese Baked Pasta

This recipe is fantastic! I used ground sausage instead of ground beef (be sure to drain the meat before adding the sauce) and it added tons of flavor. I also added basil and garlic to the sauce. Do NOT skip the sour cream or the provolone. Those are the key ingredients here. The best baked pasta dish I've ever made! Freezes well too!

Cheesy Sausage Pasta

Made a few changes and it was excellent. I used a can of diced tomatoes with onion instead of stewed and I added some crushed red pepper flakes for a little kick. I used rigatoni pasta instead of shells. Any pasta will work. The sauce did not thicken much after the additional 5 minutes of cooking, but once the parmesan cheese was stirred in with the pasta, it thickened up considerably. Fast, easy and quite delicious!!! Will definitely make this again!!

Penne and Vodka Sauce

This was the BEST penne and vodka sauce I have ever tried or prepared. I used low fat half and half and the results were spectacular. I also added a couple pinches of red pepper flakes and it made a huge, flavorful difference. I prepared this dish and two of us finished it off. Will double it up next time so there will be leftovers!! Great with garlic bread. This is a keeper!!

Garlic Chicken

I used panko crumbs which gave a much more crunchy finish. In addition, instead of all olive oil, I used half olive oil and half butter, which gave a richer flavor. You could also use this recipe as a base for chicken parmesan, and just add tomato/pasta sauce and mozzarella cheese on top of each chicken breast

Asparagus Pie

This is a great basic recipe but can be changed to suit tastes. I added some shredded cheddar cheese and it came out great. Mushrooms and ham are also great addition ideas. I also think it would be good with crumbled bacon.

Grandmother's Oatmeal Cookies

I have tried so many oatmeal cookies recipes and this one is the BEST by far! I substituted unsalted butter for the shortening (I didn't have any on hand) and I also used semi-sweet chocolate chips instead of raisins. These cookies were downright addicting!!!!
