Homemade Black Bean Veggie Burgers
Delicious! Per recommendations from previous reviews, I made some alterations. I used a food processor to chop up the pepper and onion very fine and then drained the juices. I also rinsed and dried the black beans before mushing. Added 1.5 times the amount of bread crumbs (or oatmeal in my case because I never have bread crumbs) to help the patties stay together. Once I made the patties, I put them in the freezer. Pulled out of the freezer a few minutes before grilling. I sprayed some foil and folded over each individual patty and grilled that way. They stayed together perfectly, and have been delicious each time I have made this recipe. This is quite a bit of mess during the prep (when you have two kids "helping" you), so I always double the recipe and freeze 1/2 of the patties so I can just pull out of the freezer and grill. One of my family's favorite recipes!!

Louisiana Sweet Potato Pancakes
These were delicious and much like pumpkin pancakes. I made a few alterations, as previous posters recommended. I cut the nutmeg in half, added 1 tsp vanilla, 1 tsp cinnamon, 1/4 cup crushed walnuts and used applesauce instead of butter. I recommend smoothing these out so they are thin, as my four were a little too thick and gooey in the middle. I also microwaved the sweet potatoes for 10 minutes to cut down on prep time. Yummy! Will definitely make again!
