This was absolutely delicious. My husband said it was the best potato soup that he had ever had! The only problem I saw was that even though I doubled the recipe, I still only came out with 8 servings. Maybe my portions were off or I let the soup reduce a little too much. Regardless, the soup was fantastic. I made a few changes to the recipe to suit our tastes. I added cooked bacon instead of ham (about 10 strips worth in a doubled recipe), nixed the celery,and used white whole wheat flour instead of all-purpose. We couldn't taste the wheat flavor of the flour at all, which was something I was afraid would happen. We will definitely be making this one again.
