Coconut Curry Fish

I used pollock, which doesn't fall apart as easily, and cut it into large chunks, and the recipe turned out perfectly!

Slow-Cooker Barbecue Ribs

Works great! I did use a bottled BBQ sauce instead - it's just easier! My ribs didn't fit all the way down in the slow cooker, which I think was fortuitous, because they got a drier "finish" to them.

Baked Slow Cooker Chicken

Perfect! I did brown the chicken first, which is easier than it sounds, and I used potatoes and carrots on the bottom of the crockpot instead of the foil. I added a half cup of white wine to the bottom of the crockpot. I rubbed the spices under the skin as well as on the outside - I used the "Simply Organic" brand of all-season salt - and stuffed the cavity with onions, celery, and mashed garlic. Do spoon the juices over the top when you remove the chicken. The breast meat was a little dry - I might try putting it in upside down next time to see if that helps.

Yummy Lemon Salmon Burgers

Pretty easy weeknight recipe. I used fresh breadcrumbs made in the food processor, since I didn't have any packaged ones around, so that may have changed the consistency a little. They were soft, but held together fine in the pan. I liked the sauce - very easy to put together and adds a nice touch!

Bean Soup With Kale

Good stuff! I made it up to the point where you mix everything together and simmer, then put it into a crockpot on low for a few hours while we were out at an event - we came home hungry and soup was on! Some parmesan cheese is good on top (I forgot the parsley), and I served it with slices of french bread topped with olive oil and parmesan and run under the broiler until toasted.

Linguine with White Clam Sauce II

My family loved it! They said it's a "keeper." I doubled the garlic, and used a bit more clams, as I was trying to use up a large 32-oz can we had purchased by mistake when we thought we were buying clam juice.

Flatlander Chili

Very good! I cut the recipe in half, and used a whole can of tomato sauce instead of half sauce & half juice, and left out the tomato paste. We are a mixed meat-eating/vegetarian family, so I divided it into two portions and added cooked ground buffalo meat to one portion and fried crumbled tempeh to the other portion. Everyone loved it!
