Sauteed Garlic Asparagus

I used less butter than called for because it was all that I had (maybe a little over two tablespoons.) It was still way too much! The asparagus cooked way too quickly -- some of it burned before the ten minutes. This recipe left the asparagus soggy. I would probably never use this again.

Salmon Patties I

I made a few changes to the recipe. I added an extra egg because it was so dry, and used a little less breadcrumbs than called for. I'm not a fan of onions, and replaced them with chopped cucumber for that crunch factor. Overall, this was a great way to use up some canned salmon I had on hand. I will definitely make this again!

Maria's Broccoli Rabe

This was another experiment with a new vegetable! It turns out that I am not the biggest fan of broccoli rabe. However, this recipe was simple, and it honored the vegetable. My dining companion discovers that he likes the vegetable, and he really enjoyed it!

Pasta and Garlic

This is a simple recipe, and a great base. I liked that it was light on the olive oil; I don't like too much of its strong flavor in my dishes. We did feel that it needed more garlic, though!

Stuffed Artichokes

I had not eaten artichokes in years, and when I saw they were on sale, I decided to stuff them. The process was very labor-intensive. It turns out that I'm not a big fan of artichokes, after all that work! (The stuffing was delicious though-- after all that cooking, it tasted very yeasty, the bread crumbs took a dominant flavor. It was almost beer-like.) My dining partner enjoys artichokes, and while he thought they were good, he said they didn't justify the work they entailed.

Chef John's Salmon in Parchment

This was an easy dish to make, but it is very impressive. I think it would be nice for a romantic date-night! I made a few substitutions. I didn't have salmon, so I replaced it with tilapia. It is such a basic recipe that almost any fish or poultry would do. I didn't have parchment paper, but foil worked fine. This recipe is easy to prepare, but it does take some time. The results are beautiful and while tasty, they were a little bland. I would definitely suggest seasoning this to your taste. Next time, I'll do a citrus pepper blend. This is a great recipe for the beginning of a fantastic meal, though!

Chunky Marinara Sauce

I was out of fresh onion and garlic, so I used minced versions of both. I didn't have a can of diced tomatoes, but I had a can of stewed. I also replaced white sugar with brown sugar (I don't use white sugar for health reasons.) The salt was replaced with garlic salt. This was a solid sauce. Nothing spectacular, but not bad, either.

Healthier Easy Baked Tilapia

This was a great recipe! It was easy to prepare. The flavors were very simple, but enjoyable. I didn't have any lemons on hand, so I used an orange. The citrus and sweet tasted very good! I also used broccoli and carrots-- I don't like cauliflower or red pepper. Next time I would add some more seasoning, though. It was a little bland. I will definitely make this again.

Oven Baked Zucchini Fries

These zucchini fries were labor intensive for the results. The coating was rather bland-- my dining companion and I had to add more seasoned salt as we went. The zucchini became a little slimy; the texture was unappealing.

Baked Tilapia in Garlic and Olive Oil

This recipe was simple to make. However, when it was finished cooking, it was not aesthetically pleasing. I used a lot of garlic on these filets, and they did benefit from it. They were bland. The onions did not cook in a satisfactory way, either. My dining partner said the flavor profile was good, but it was a little too basic.

Baked Cherry Tomatoes with Garlic

I chose to make these tomatoes with a garlic tilapia I was serving. It was too much work to slit the small tomatoes and insert garlic into each one. I did not feel like it added much flavor, and they were cooked for too long. The texture nor the taste was satisfactory. My dining partner found them to be a simple, delicious treat, however. That is why these received two out of five stars, and not one.

Campbell's Baked Macaroni and Cheese

I bought some Campbell's condensed cheddar cheese soup because it was on sale. When I got home I realized it would be boring by itself! I found this recipe and decided to change it a little bit. I added approximately 1/8 a teaspoon of garlic salt, and almost a whole bag of frozen chopped broccoli. I also used Italian bread crumbs instead of plain ones. Even with theaw additions, this recipe was bland. We ended up adding more spice to it as we ate. While this recipe wasn't bad, I won't be making it again.

Deb's Scallops Florentine

I read other members' alterations to the recipe, and I took them into consideration when I made this for New Year's eve. I did not pre-cook the scallops, and I used fresh spinach. I replaced the cream with half and half. I removed the mozzarella, replaced plain bread crumbs with Italian ones, and used half of the old bay. Overall, the recipe was very good! The scallops came out perfectly. My only complaint was that between the bread crumbs and the reduced old bay, it was still too salty. I would use half a teaspoon of old bay the next time I make it. But, we really liked this and will be using it with other seafoods in the future.
