Chef John's BLT Pasta
This recipe is AWESOME! It's one of those dishes that makes you constantly compliment it throughout the entire wolfing of the food. The mixture of bacon, lemon, garlic, creme fraiche is subtle yet complex. Add that to the peppery arugulaI and sweet grape tomatoes, and it is AMAZING. I roughly 2x/3x the amounts (have to have leftovers), which roughly was a full pack of bacon. I use nitrate free pork bacon (Hormel) and don't drain any of the drippings. I also added more garlic. This could be on The Cheesecake Factory menu along side their most requested pasta dishes. My husband asked me to PLEASE make this once a month. I will happily oblige! THANK YOU CHEF JOHN FOR ANOTHER GREAT ONE!

Chicken Breasts with Balsamic Vinegar and Garlic
GREAT basis recipe for a fantastic fast meal. I love lots of extra sauce, so I doubled the broth and balsamic. I was out of thyme, so I used Oregano. Piles of garlic more, a couple of teaspoons of sugar to balance the extra vinegar, extra salt to taste...and my family seriously wanted to lap the sauce off their plates! I actually did when no one was looking! Served over Farfalle with brocc on the side and my husband couldn't stop raving. Thanks for this great recipe that can impress in about a half hour.
