Pineapple Fried Rice

It came out very tasty--although I added cashews and bean sprouts and didn't end up putting the tofu or the mushrooms. Also I fried some fresh ginger and garlic in the oil before adding everything else, it gave it a more strong flavor. Cooking the rice in the pineapple juice is a great idea!

Rice Pudding (Kheer)

It came out delicious, but took much longer to cook to the appropriate thickness. Still it was worth the wait!

Sour Cream Mocha Cake

I made this cake several times for potlucks and it always got rave reviews! Even without the nuts, it is definitely a winning recipe. The second time I increased the chocolate a bit, it made it just that much more chocolatey.
