Connie's Zucchini "Crab" Cakes

Definitely, you need to use a ricer or just squeeze in a paper towel, to dry the zucchini enough to handle. Great tasting, and we'll make them again, but for sure you're not going to fool anyone that their's a crab in there somewhere. We used Phillips Seafood Seasoning, but there's just as much salt in that as Old Bay. You can never have too many Zucchini recipes this time of the year.

Puff Pastry Salmon Bundles

Oh, man! Great recipe. Salmon was juicy, tender, just perfect. The flavors were perfect. I was looking for an asparagus recipe and stumbled across this one. There aren't many good salmon recipes, but this one goes on my list. This was a two-fer, asparagus and salmon. Thanks!
