Lobster Mornay Sauce

Delicious and Easy Corn on the Cob

My choice has always been to use Equal or artificial sweetener or Agave instead of sugar. Just a little bit. I use it to sweeten fried onions and peppers for sausage or steak subs as well! Yum.

Mouse's Macaroni and Cheese

Yum...I made it with Velveeta and sharp cheddar. Because I have made this before and I like it, I added cut up small onion, garlic powder, the mustard, and a little bit more than a teaspoon of Worstershire sauce and a shake of red pepper flakes (I put tobasco on it after it's cooked because I like it hot!) Soooo good.

Kielbasa and Cabbage

I really enjoyed this recipe. I changed up with some splenda instead of sugar (about a 1/2 packet) and some white zinfandel wine instead of water. As well, added some pre-boiled aldante' baby carrots and a dash of apple cider vinegar to taste when plated. Yummy.

Bacon Chicken Livers

I make this recipe all the time. I get the chicken livers in a container in the meat dept. Clean them up and cut them into bite size pieces. I use maple bacon and cut each slice in half before making. I find that if bacon is a little frozen it makes cutting into it easier. I add a can of sliced water chestnuts as well. Put a 1/2 piece of bacon in the palm of your hand, add a piece of the chicken liver and then a sliced water chestnut on top of that. Roll bacon around all and place on cookie sheet. After they are all on the cookie sheet, sprinkle with lemon pepper, oregano, or whatever you like. Place in foil lined pan that is sprayed with non stick spray. Cook at 350 for abut 15 minutes then turn on the broiler while they are in the oven and cook 5 minutes or until bubbling and crispy. (I'd watch them closely so they don't burn). I serve with tobasco and honey or any hot sauce you like. One pound bacon, 1 can sliced water chestnuts, one container of livers. YUMMY!!!

Cocktail Meatballs IV

I love this recipe. I added a can of drained water chestnuts and can of chunk pineapple. I added a little ketchup and a touch of garlic powder. We had to use a slotted spoon for serving but even the kids enjoyed them!! Some of the kids used finger rolls to make a sandwich out of them.

Bacon Water Chestnut Rolls

I make these a lot! Low carb. I use chicken livers (in a container in the meat section of the grocery) cleaned up and cut into small bite size pieces, place a half a slice of maple flavored bacon in the palm of your hand, then put a piece of chicken liver on top of that and place a sliced water chestnut on top of that. Wrap tightly folding the bacon around it. Place on sprayed foil on cookie sheet. I sprinkle lemon garlic and oregano on these and bake for 20-25 minutes then put the broiler on for about 5 minutes watching them, for a crispier crunch. I serve with tobasco and honey on the side!
