Downeast Maine Pumpkin Bread

I haven't made pumpkin bread from scratch before, and it turned out perfectly! I ended up making 4 mini-loaves and 10 muffins b/c I didn't have regular loaf pans. I had seen another recipe about adding butterscotch chips to pumpkin muffins, so I tried it with half of the recipe. They added a nice sweetness to a perfectly moist treat. Thanks for the recipe, I'll be taking it to my parents' house for dinner on Thanksgiving.

I guess it's not fair for ME to rate them, but I will tell you what my peanut-butter hound thought...he licked and licked them, but wouldn't eat them. They were easy to make and smell fantastic, but he won't eat it!

Easy Walnut Raisin Biscotti

After eating phenomenal biscotti in Port Townsend, WA, I wanted to try to make something similar at home. I modified this recipe by adding 2 tsp of orange zest and substituting chocolate chips for the raisins. They turned out perfect, and were a huge hit with friends and family. Thank you!

Six Can Chicken Tortilla Soup

I made this for a small dinner party last night, and it was a HUGE hit! I didn't have canned chicken, so I quickly pan-fried a couple of chicken breasts in salt and pepper, then shredded them. Everyone loved it, and I will DEFINITELY be making it over and over again. Thank you!

Peanut Butter Cup Cookies

These are my new favorite!! As a child, I looked forward to my grandma's peanut butter kiss cookies every Christmas. This year, I made them using hershey kisses instead of peanut butter cups, and I must say, they were so much better than Grandma's!! Thank you for the recipe, I love these! (So did the family and the coworkers!)

Fish Chowder

I made this with a few alterations for a surprise pirate party for my boyfriend, who happens to LOVE seafood. I used 1 lb cod, 1/2 lb shrimp, 1/2 lb scallops, and used a can of mince clams in place of the mushrooms. I'm allergic to shellfish, so I couldn't try it...he couldn't get enough of it. He said the consistency and spices were just perfect. He ate two bowls before we took it to the party, and for once, my dish was the first thing everyone emptied! Thanks for the recipe! I'll be making it a lot more!

Corn Chowder I

I was searching for a good corn chowder recipe to make for my boyfriend, whose mom made it throughout his childhood. My first attempt was this recipe. Much to my delight, he muttered the words, "Yummm, just like mom used to make!" It was easy to make, VERY tasty, w/ great consistency. Next time I'll substitute a can of kernel corn for the creamed corn. Thank you!! I'll be making this for years to come.
