Fabulous Roasted Cauliflower Soup

I made this soup after I read many reviews. I used 1 head of cauliflower, added 2 potatoes and 2 large carrots, added 7 large cloves of garlic and 3 shallots tossed them all in 1/4 cup EVO, layered on a roasting pan then sprinkled with ground pepper and sea salt and roasted. I upped the chicken stock to 4 and left out the water. I also added 1/2 tsp cayenne pepper. I used 2 cups of 1/2 and 1/2 instead of heavy cream. After I blended everything with a hand immersion blender I added 1/2 cup of both freshly grated Asiago & 1/2 cup of Old Cheddar and salt and pepper to taste. Amazing. Garnished it with fresh bacon bits, fresh chives a few pieces of roasted Cauliflower florets and a little of the grated cheese blend. and served it home made buttermilk biscuits (recipe from Allrecipes) Great for this cold rainy fall day.

Banana Nut Muffins

Most cooks like to tweek a recipe, as do I. I love to read what others have tried. I used 1 cup all-purpose & 1/2 cup whole wheat flour. I also used 2 whole eggs, but also added 1/3 cup sour cream and 1/3 cup apple sauce as did some others. I added 1/2 teaspoon vanilla, and the zest of a small orange along with the lemon zest (a must). I find walnuts can be bitter so I always used my Georgia pecans. Baked at 350 for 22 minutes and they are the best we have had. Baked them for friends at the marina and they loved them. Thanks to all who review.

Breakfast Pies

I read a lot of the reviews & agree, this is a recipes you & make your own. I used ramekin's sprayed litely with Pam & then spread out the biscuit dough. I put a little shredded cheese on the bottom. I used medium Italian sausage & chopped bacon. Instead of green peppers (can not eat) I used red, orange & yellow & also chopped finley 2 mushrooms. Sauteed them all with my onions & seasoning (missing from original recipe). I mixed my eggs & milk with some finley chopped chives & fresh ground pepper in a measuring cup with a hand elmusifier/blender (much easier to pour). Topped with shreeded old yellow cheddar & Gruyere cheese. Baked for 20 minutes. They came out great with lots of flavor. Next time I will try adding some tomato just before the egg mixture. I look forward to reading other reviews. Any other suggestions out there....

Classic Macaroni Salad

I loved this recipe. I read many other reviews and also many a few changes. Because there are only 2 of us I downsized the recipe. I used green onions finely chopped, and yellow, orange and red peppers finley diced. I used less than 1/4 cup sugar. I used 1 tbsp white & 1 tbsp cider vinegar. I used 1 tbsp Dijon & 1/2 tbsp dry mustard. I also used Mircale Whip and added 2 tbsp sour cream. For more color I added 1/3 cup frozen peas and corn and sprinkled smokey paprika. I also added 4 strips and cooked bacon coarsely chopped. It was the first time in many years I have made this type of salad and I will make it again. Thanks to you all for your reviews...

Pan Seared Red Snapper

Just great. I do not cook alot of fish but this was great. I took the suggestion from Gitano June 28, 2011. I soften some garlic butter and brushed it on first and then seasoned with ground sea salt and fresh ground black pepper. I broiled mine also. I used fresh grated ginger, good honey and good extra virgin olive oil. I usee fresh chives instead of green onions. We like sauce, so I increased the sauce portions and made it ahead, so when the fish was ready so was the sauce. Served with Jasmine rice and fresh green beans and carrots, it was worthy of any restaurant. Will make again. Thanks... Allrecipes....
